Manager of the Orange County Fair Equestrian Center and re·
cently elected member of three local and national horse associa-
tions.
llol'll lerMlll•------------
Wben Gimple's not at the equestrian center, she's usually flying
around the western United States for various duties associated
with various horse associations. She is a member of the Western
Commiuee of the American Horse Shows Association, a board
member with the Orange County Horse Shows Association and
was recently re-elected to the Pacific Horse Shows Association,
which sanctions equestrian events in California, Arizona and Or-
egon. Gimple, 38, of Santa Ana, said involvement with the as-
sociations helps keep her up to date about the horse industry,
which benefits the equestrian center, which she's managed since
1984. She has worked at the center for 12 years. One of the few
remaining year-round stables still left in Orange County, the cen-
ter includes a training center and the stables. The equestrian cen-
ter is host to 20 local horse shows annually, the main ones occur-
ring during the annual summer fair, and is a frequent field trip
destination for local students. "We have 220 horses on the
grounds," she said.
A LIB.ONG HlllB'f---------
Gimple, who grew up on a horse ranch in Rolling Hills, really
developed her interest in horses at age 10 when she started show-
ing quarter horses, a hobby she maintains today. After high
school, Gimple became a dental assistant, working for two years
with a local dentist .
"But I couldn't pay my horse expenses, and everything was so
negative," she said. Working at an equestrian center, where many
people come to relax and pursue their hobbies, is completely dif-
ferent than those days in the dentist's office, she said."Here it's
fun," she said. Gimple said she couldn't have ever imagined hav-
ing such a job when she was a you ng girl growing up on the horse
ranch.

COST A MESA -In a merger that has
been in the works for about a year, the Costa
Mesa Women's Club will soon be opening
the doors of its West 18th Avenue clubhouse
to the future women or the area -Girls
lncorporated of Newpon Mesa.
By the end of summer, Girls lnc. will or
assume ownership of the Women's Cub's
half-acre clubhouse at 610 W. 18th St., an
estimated $500,000 gift that will allow the
organization to double the year-round
activities it now offers next door to
underprivileged and at-risk girls.
"It's just a tremendous legacy for the
women of our community," said Rita
Redaelli, executive director of Girls lnc ..
formerly known as the Girls Club of
America. "We're very excited about this
acquisition. We're very much in a growth
mode."
Despite the change in ownership, the 139
members of the Women's Oub wiJI continue
to meet and socialize as usual at the
clubhouse. They just won't have to take care
of the building, an increasingly difficult task
for the aging members.
~'The building is in need of repairs to bring
it into optimal condition," said club member
Gwen Collins. "It's rather beyond the means
of the members.
Women's Qub President Eleanor Hodge
said members overwhelmingly approved the
merger during a vote Friday.
"I feel it's a real public service," Hodge
said. "This is what our club is all about, to
serve, to help the future women."
Also as part of the agreement, the city of
Costa Mesa would gain ownership of the
Women's Qub property if Girls fnc .. were to
ever disband, Hodge said.
"We think it's a good deaJ for the whole
community," said Assistant City Manager
Rick Pickering. The City Council is expected
to fmalizc its involvement in the deal in
mjd-June.
Since 1950, the Women's Qub -which
staned as a sewing circle back in 1910 -hu
been meeting in the clubhouse, holding social
activitits in lbe large auditorium, which
includes a stage and kitchen.

Just a couple of guys In the wilderness, stalking the wily pot roast
I figure it could be a male bonding kind of thing.
We bite the caps off a couple of tall Coronas,
spit 'cm into the recycling bin, switch on the
ball game, belch, and then I show my buddy Scott
how to make chicken breasts with white wine sauce.
beans and greens and maybe a little meat now and
rhen, toss it in the Crockpot and voila, home
cooking.
Actually, Scott's kind of behind the curve on this
one. This whole male cuisine movement actually
started years ago as part of the Sensitive New Age
Guys thing. Now it's really gone beyond that, with
the Men's Movement and all. You put on war paint,
go out to the wilderness and beat on a drum for a
while, hunt down your own chicken, bring it back
and saute it.
"Yeah, but you gotta know how," Scott said.
"Hey, I could show you the ropes," I said.
Maybe we can omit the Latter few steps, for
simplicity's sake. Scott gets enough hunting and
ga thering in the business world. I don't want him to
think cooking is like work.

Not that I'm your stereotypical
male cook. A lot or men, when
they cook, do it aggressively, as if
it were a sport. You know the kind
of guy I'm talking about. Any
medium-sized circle or friends
these days will tend to ,have one
legendary male cook, who can
whip up a batch of stuffed mussels
or supremes de volaille gabrielle at
the drop of an egg whisk, and still
find time to be a corporate lawyer
on the side. I have one friend who
makes French bread that tastes
and crunches just like the stuff my
taste buds still remem ber fondly
I've been wanting to teach Scott, my bachelor
friend, to cook fo r years. In fact, teaching anybody
to cook seems as if it woul d be a good, satisfying
thing to do. I used to teach swimming when I was
in college, and I always felt 1 was doing a great
service for people, protecting them against
drowning. Well, to me, not knowing how to cook is
like drowning in a sea of microwave-able dinners.
------from my junior year in Europe.
I'm not like that, In fact, of all the men 1 know
who cook, I'm probably the least flamboyantly
gifted. But I'm reliable. I cook like your aunt Edna
from Minnesota. 1 like nice rich chicken pies, pot
roasts, bean stews, tuna casseroles, anything with
lots of pasta and cheese in it. 1 don't do haute. And
I don't do lite.
One day a few months ago, we were talking about
the tough economic times, and how expensive it is
just to stay alive these days. We got to talking about
food and I mentioned how much cheaper it was to
cat if you cooked from scratch, instead of buying
p:{ckagcd ready-to-eat food. You can just buy a few

All the same, you knew they had <:tesigns on

They put it together and what
they got was fun and good eating,

A special event in and of itself,
the glitzy soiree, held in the
Vintage Room of the Ritz
Restaurant, honored Charles and
Nora Hester for their long-time
support of CHOC and thanked
underwriters of the Guild's
upcoming fund raiser, Designs for
Dining. It's a tour of homes all
around town -to be held May
6th -which will include a
luncheon at the Crean's.
So far, more than $40,000 has bee'n ·promised in
support. Tom Mahoney, husband of co-chair Jean
Mahoney, underwrote the gig at the Ritz. He
thinks CHOC does great things and enjoys adding
his support.
"I don't believe in raising the children, I'm
through with that, but I certainly believe in helping
them," he laughed.
B ette Dobrott co-chaired the evening, wh!ch
featured a great assortment of appetizers -
like delicate proscuito wrapped bread sticks -and
sips of wonderful wines.

John Ellington, Richard Doyle and Don Took in the world
premiere of "Hospitality Suite" at South Coast Repertory.
'Hospitality Suite' offers
stellar cast, lots of laughs
E very rcw years, South Coast Repertory mounts a play like
"Glcngarry Glen Ross" or "American Buffalo," seemingly
to remind us that its backbone -those actors who helped
start the company back in the mid-1960s -is still firmly intact.
This ti me. the notable example is "Hospitality Suite," the world
premiere from a new playwright which -like the above examples
-focuses on the way people do business. Its stellar cast is
comprised of three founding SCR members and a "junior
partner" who's only been with the company since 1972.
"Hospitality Suite" shouldn't be confused with "Plaza Suite" or
Tam
T1lul
"California Suite.'' Jn the first place, it's far
funnier than either of these Neil Simon hits. In
the second, it's also a very meaty morsel -a
plate of shrimp among the veggies. to borrow an
analogy Crom the play itself.
Playwright Roge r Rueff, a chemical engineer
from the Midwest enjoying his first exposure to
professional theater, has produced an inside look
at the world of on-the-road salesmanship th:it is
both howlingly funny and stingingly
thought-provoking. Under th e deft direction of
Steven Albrcui, it's the finest original play
mounted at SCR since Richard Hellesen's
"Moonshadow" a few seasons back. Theater
Critic Rucff masterfully sets up his audience with the
tried and true formula of diverse personalities
functioning in a sequestered environment, and
delivers enormously funny situations again and again before
slipping in "the messa ge ," which creates a sobering finale. His
characters are real. accessible and credible from their varying
viewpoints, :ind his story is painted from a unique middle
American per pccllve.
Richard Doyle, in one of his bes( in a long line of memorable
performances, attacks the role of a frustrated lubricants salesman
with a vengeance. Unlike many parts of this type. Doyle's
character contains a thick inner layer of integrity underneath the
snake-oil peddler hogwash. which heightens the role's vitality.
As his longtime a~~ocinte and marketing specialist, Don Took is
a picture of restraint and contemplation. Toolc's character i n
man at the crossroads, pondering his next direction, and the nccor
delivers a performance steeped in depth and sclf·exnmination.
John Ellington is the wild card in the deck, a young research
assistant whose deep religious convictions stand at cro~ purposes
with his mission in his first trip on the ro:id. His stalemated
confrontation wi1h a seething and rruscratcd Doyle is ma terful.
Dwight Richard Odie's setting is appropriately bland, and Doc
Ballard's lighting is equally impressive, particularly in the play'
final moments. The u e of middle-of-the-road musical selection
like "Feelings" further enhances the plastic atmosphere.
SCR 's Second Stage ha introduced 50me c..ccptional new ploys
over rhc year ("Moon hndow," "Brothers," "V & V Only;• etc.),

A ft.OWER BY ANY OTHER STREET NAME -After a
quarter-a:ntury of residence along the coast of Orangcshire,
rve finally discovered the quaint community of Corona del
Mar.
Ob. rve spent lots of time there ·-mostly inching along Coast
Hipway in a scmi-parkcd vehicle, careful not to collide with
snails and turtles in the passing lane -but this was my first
leisurely exploration of the byways.
Until last Friday, the main street of Corona
dcl Mar was si mply a link connecting two ends of
Brcnvillc, present and future. For the most direct
route through town, just follow the sewer and
water lines under construction. The only way to
get lost was to disappear into a ditch.
Then, determined to correct this auslandcr's
narrow impression, along came two native
guides: Bank of America branch manager Royal
S. Radtke, president of the Corona dcl Mar
Chamber of Commerce, and real estate maven
Unda T11llaatttl of the Gffl"lt Elkins kennel of
-----home-sniffing bird dogs.
Together, with Linda at the wheel and Royal
in the back scat, doing his Chamber of
Commerce thing, we ventured into exotic parts
-----• of the world I'd never seen before.
Take· China Cove. I'd often admi~cd the picturesque ~cttlement
of China Cove from the water (it's on the left, as one sails
seaward along the main channel), bu t this was my first exploration
via the overland route.
Gracious, what a fascinating discovery! I mean, how long has
this tucked-away Utopia been up there? Is it really in the same ,
little village of Corona del Mar (pop. 12,902), whose most
endearing contribution to culture (for casual motorists) has been
·u alphabetically listed cross-streets with the flowery n:l'mcs?
Detouring for a moment, let's talk about that. If. you don't run
out of petrol, you'll crawl by successive side streets named
Avocado, Acacia, Begonia, Carnation and Dahlia.
To the best of my knowledge, there's no downtown
thorough-fare beginning with the letter E. If there's an Edelweiss,
must've missed it. Not even an Eggplant.
hen, moving right along the primrose path into the wilds of
Newport Beach, the flowery trail picks up with Fernleaf,
oldcnrod, Heliotrope, Iris and Jasmine.
There is, egad, no street with my favorite initial, K. which is
nderstandable. Why would anyone want to have an addres, on,
y, Knotwced?
It resumes with Larkspur, Marguerite, Marigold, Narcissus,
rchid, Poinsettia and Poppy, but (except for an oddly place.d
azcl) that's the end of the line. No Queen Anne's Lace, no
Rhododendron, no Snowdragon, no Tulip or Trillium, no
Umbrella Plant, no Vcnus's Flytrap. If Corona dcl Mar expands
southward, which isn't likely, planners could call up such reserves
as Wisteria or Wolfbanc, Yucca and Zinnia.
Well, dam, I started to tell you about China Cove -but seem
to have gotten sidetracked. Let's stay touch ...

' It's time to reform the Brown Act
~ Legislation needed to prevent
politicians from doing business
behind closed doors.
I n a season filled with earthquakes,
disaster, politico! scandal and a resilient
recession, it's easy to underst:.ind why a
piece of proposed legislation known simply
as SB 1538 would get ~ost in the shuffle.
But it's worth taking the time to
understand the Senate bill, what it means
and why it is being proposed. It's that
important.
In basic English, state Sen. Quentin
Kopp's legislation would put some fire and
energy into the Ralph M. Brown Act -the
cornerstone in California for preventing
politicians Crom doing business behind closed
doors.
The Brown Act, sadly, has been a failure.
It is abused routinely. It is manipulated by
county and city attorneys. It tends to strike
amusement, not fear, with those ,.,.ho trample
upon its good intentions. It is, in the words
of one interested observer, the "Rodney
Dangerfield of California law. It gets no
reSP..eCt."
The living proof of its )pineless qualities
can be measured in the fact that there has
never been a single conviction for a Dro" n
Act viol:uion in th e 40 years of its cxi!ltence.
And while we'd like to believe that that's
because we have such a fine stock of honest,
rule-abiding politicians in California, "e
know better. ' S en. Kopp's reform of the Brown Act
would accomplish a number of things, nil
of them in the public interest. There may be
a few city attorneys, council member) and
supervisors out there who protest the change,
but we suspect the voters won't.
Here are the highlights of the reform:
j The bill would clamp down on so-called
retreats. Cit.y councils and boards would be
prohibited frQm the· now-accepted practice of
spending a restful weekend in San Diego or
Palm Spri ngs to discuss "long-range
planning" or other vague m:.itters.
j It would ban the often-used excu e of
"pending litigation" for closed-door sel>~ion~.
Councils everywhere -Ne"port Beach and
Costa Me sa included -incessantly go
behind closed doors cveryt1me the local city
attorney can sweep thb 11cm or that under
the "pending litigation" rug. As it turns out,
there isn't an) thing a city attorney can't twi~t
into a hypothetical legal dispute.
./ Would prohibit so-called "personnel"

didn't have one bad thing to say about us."
"She was one of the happiest people," said
sophomore Robert Herman. "She loved life

Ever since Ferguson was a kid, her mother
said, she was inher-ently generous, splitting
the money she made on chores with her
younger sister Errin, giving lhc pennies in her
piggy bank to strangers on the street and en-
couraging anyone who needed en-couragcment
-without judgment.
"Especially when she saw kids who didn't
have a lot of love," her mother said. "I'd hear
friends say her hallmark was a hug and the
words: "I love you" -every time she met
them.
"She was just a great kid," said her falher,
Nelson. "And very unusual in that everybody
she touched loved her."
Friends who crowded into counselor offices
Monday agreed, and sa1d they would miss the

election, MacMillian uid
community members say they
would be more likely to vote in
a consolictatcd elec1ion. Voter
turnout has averaged between 8
and 12 percent in the school
district.
The move is expected to save
approximately $45,000 for the
Newport-Mesa Unified School
District. Eleclions in November
1991 for two school board sc:its
cosl the district approximately
$86,000 because the race was
the only contest on the ballot.
But only about half of the cost
will be saved thr,ough
consolida1ion, according to ~
school officials. ~
Trustees voiced unanimous
support for the move to
consolidate elections at their
last school board meeting, but
delayed a vote in order to
notify community groups of
their pending decision.
"The only f cedback I got was
positive," said school board
member Rod MacMillian. "l
haven't heard a single person
who disagreed with it. The
general consensus is, not
enough people show up."
MacMilli3n also s3id there is
widespread support for the
financially troubled districl to
save cost5 wherever possible.
The Newport-Mesa school
district is one of only four
Orange County public school
districts that hold off-yenr
elections,
Some school board members
expressed concern thal
switching elections would make
it harder for challengers to run
against incumbents. Until lasl
year·s upset victory by Martha
Fluor over incumbent Tom
Williams, school district
incumbents were routinely
re-elected, often without
oppo ition.
Most school districts in
Orange County ~-otcd to
consolidate with the general
election after CollSt Community
College District consolidated
elections in December 1990.

DeCinces is one or only two players to

Antique charm
Don't let your treasures turn your home into a museum
By Marta Alexander
I t is not necessary to have a
room full of antJques, au
contraire, a few pieces
properly situated can create a
truly unique and personal
statement
Frequently, we see rooms full
of quality antiques, yet the room
emits a rather stuffy atmosphere
devoid of any character or
warmth. There are a few basic
acquisitions which will establish a
foundation for that European
feeling of so9histicated warmth.
table, prevalent here in the U.S.,
consider a classic tea table.
Purchase a painted or
embroidered screen to effectively
define areas in the room.
Next, seek out a generous--sized
armoire or biblioteque wall unit
and learn the joys of space
utilization. Situate one or two loot
stools in the room for sitting near
the fire or resting your feet after a
hectic day. Accessories focused on
selected family heirlooms and
photographs will round out the
composition.
complement your room's wall
colors. Then let the designs and
colors express themselves with
their vibrancy.
It is not easy to be consistent
when writing about antiques and
the general condusion is
impossible, since many antiques
arc not functional and should be
exhibited only in a museum.
Quality reproductions, therefore,
should be considered rather than
worn and unsound true antique
pieces.
The balanced between function
and decor is an important
measure, thus when evening
guests appear relaxed, a bit
gregarious and reluctant to leave,
you probably have struck that
balance of true ambience and
comfort .•

Start with a comfortable and
moderately large sofa (with the
emphasis on comfort) of
appropriate design that
complements the room theme
and scale. Try one or two
Bergerac chairs, paired with small
painted or Tole tables.

The recent revival of painted
furniture pieces offers an exciting
variation for today's buyers.
Inspired by classic fabrics and old
print designs, painted furniture is
an exciting variation. When
purchasing painted furniture, try

Colorful cymbidium orchids thrive in Orange Coast climate
By Paul Brecht
C ymbidium orchids are one of the
easiest to grow outdoors here in
Southern California.
Cymbidiums may be grown in areas that
have favorable conditions for camellias,
azaleas and other shade-loving plants. If
grown in ground beds they should have
ample sunlight during their growing season .
If grown in tubs they have no problem,
beCause they can be moved to suit their
needs.
Cymbidiums will tolerate temperatures
down to freezing. Cymbidiums can be
grown in soils suitable to other shade-loving
plants. A soil that is loose and has good
aeration and drainage but which retains
moisture quite readny is best. Constant
moisture is required during the growing·
season.
One of the main causes of leaf tip
die-back is insufficient water during this
time. Plants must be leached well when
watering so there will not be any salt or
sodium buildup. Repotting is necessary
about every two or three years
shadier areas or shaded to protect the
flower from being faded by the sun, and
also to stimulate more stem length and
produce a more graceful
display of flowers. • when the plant has filled the
container.
The best time for repotting 1s
right after flowering in the spring.
Each plant should be left in
clumps from three to five bulbs
depending on the vigor of the
plant.
Light is one of the most
important factors in the
Light is one of the

cessful flowering of

successful flowering of
cymbidiums. A ~oOd rule to follow is to give
the plants sufficient light so the foliage is a
yellow green instead of a dark green.
The cl~r you live to the coastljne, the
more out in the open you can grow your
cymbidiums. When cymbidium plants reach
flowering, the plants should be moved to

colors and the blooms last up to three
months on the plants. Plants are available at
this time of year in bud and make an ideal
gift for the spring season.
