If you're looking
for a crisis, why
no~ try 'c~utter'~
We hear a lot about hazardous waste, but what
about the dangers of hazardous clutter?
h's a crisis in our house. We have enougl)
clutter to fill several railroad
cars, but I don't know of any
state thnt would ncccpt them.
Think how humiliating it would
be while watching the evening -
news to sec your junk rejected by
waste dumps all over the· country
because it's n9t bio-degradable. I
couldn't bear to think of my
husband's high school trumpet,
now old ahd bent, classified as
an environmental pollutant.
Broken appliances, artifacts
and whatnots languish in attics
and garages for years because
they're difficult to get rid of -
or mend: The Disposable Age
disposed of that essential artisan, the Handy Man,
who could fix anything but a double negative. For
years, I've been trying to unload a 2-foot family
monstrosity of the Leaning Tower of Pisa my
uncle brought home from Italy. Reproduced in
styrofoam, it's just tough enough to survive
through the next lee Age.
Our clutter collection rivals that of any
dedicated cluttcrist. Among the debris arc three
busted bathroom scales, two burnt-out toasters, a
couple of impaired Japanese cameras, a vacuum
cleaner with no lung power, binoculars that don't
focus, and a lawn mower with stiff joints. Losers
all. But I never give up hope that a gO.Pd k.ick o r
)h:i ke might jar them back Lo life.
Our biggest disposal hassle was a 1960 car
affectionately known as The Green Shark for its
long, sinister rear fins and grinning grillwork. One
day, T he Shark expired in traffic and had to be
towed home. No one wanted her, even the scrap
dealers. In desperation, my hu sband and I
considered jacking her up in the backyard and
passing her off as a w0rk of ConceptuaJ Art.
Fortunately, a vintage car buff took her off our
hands.
... Happily, all our clutter isn't hazardous. We have
1onl!i of bio-degradable canceled checks, receipts,
old bills, unanl!iwered letters, obsolete warranties,
and junk mail. Most of it is stored in desk
drawers, the depths of which J haven't explored in
decades. For all I know, mice might be cozily
ne)ting in a clump of old Medicare bulletins.
We're also swamped with that standard flXtl,Jre
of any garage: towering stacks of vintage National
Geographic magazines that multiply li~e crazy in
captivity. Adding to the tidal wave of paper are a
never-ending flow of n~w telephone dLcectories.
I'd gladly go back to smoke signals to solve this
vexation.
One day you realize you've reached that critical
Point in time when you can't budge. You're
imprisoned in gunch. It's too late to simplify your
life by moving into a small apartment. Efficiency
nats don't have room for chaos - simple or
hazardous. Developers haven't given much thought
to this basic need.
In the future, everything will be bio-degradable,
from appliances to furniture. We'll have
disposable sofas and throwaway plates. It would
be nice, though, to leave a few household artifacts
for future generations lo dig up and put in
muse ums -like whimsical nutcrackers. These
devices may be puzzling, however, if genetic
engineering produces nuts without shells.

birthday, an outdoor party at
the market's entrance was
attended by actor John Wayne,
Assemblyma n Robert Badham,
Mayor Don Mcinnis and other
local celebrities. Letters were
read from President Nixon and
· RiChards Governor Reagan, as well as a
joint resolution of the Californin Assembly and
Senate honoring Richard's many years of civic
service.

March 10, 1983
An Orange County Superior Court Judge issued
a preliminary injunction barring Costa Mesa
dentist Tony Protopappas from practicing dentistry
until a hc~ring coul d be held on the possible
revocation of his 1iccn\c. Three
female patients died following
nnesthesia treatment at
Protopappas's dental clinic and the
Attorney General's office alleged
that the dentist was guilty of "gro~)
negligence" in the handling of his
patients.

n:ime for mniijuana p lants. Unlike marijuana ~eaves, hemp stalks grown
!or textiles do not have qualities as a drug. In fact, Boucher is oppo ed
to legalization of marij uana use as a drug. Hemp is cnvironmentnlly
friendly, in that it doesn't require pesticides and it yield more p~pcr
production than do trees. Until the latc-1 930s, it was used in the United
State to produce textiles, paper and other indu trial products. Boucher
said hemp creates a strong, linen·like fabric. Hempstead now markets
such apparel ns baseball caps, which retail for $25; backpacks, which sell
for about $50; ponchos, which list fo r $100; as well as wallets, vests,
f;1nny pouches, sports jackets and Australian-style bushwhacker ha ts.

So it's sprina and I'm fat.
What's a guy to do?
1 could be like Oprah and
take the "I-like-mysclf·the-
way-1-am" approach. That's
an offshoot from the "Fat·
is-where-it's-at" philosophy.
lf·you are fat, the "1-like·
myself-the-way-I-am" ap-
proach is pretty easy. All
you have to do is ... well ..
. nothing.
That might be fine for
Oprah, but...not for me. I do
like myself the way 1 am -
provided I'm not fat.
So how about those com·
mcrciaJ die t programs? You
know, lose all the weight
yo u want for $19.95? Right.
The commercial programs
always lure you in with
those grand promises that
you can lose weight and
keep it off forever. If that
were the case, why is dieting
a $32 billion-a-year industry
, tha1 is only getting bigger?
Since a 101 of peorlc arc f)
down on cornmercia diet
programs these days, we
now are hearing new ad-
vertisements lclling you to
"do it on your own." Just go
to the grocery store, buy the
products. read the instruc-
t ions and you're on your
way.
I don't know if that's
go ing to work. From what I
hear, Roseanne and Tom
Arnold are domg it on their
own.
ll's really tough to go if
alone. The motivation just
docsn 't seem to be there.
Some people -including
two Daily Pilot colleagues
-will make a bet that one
can lose more weight than
1he 01hc r. But you know
what happens when people
do 1hat? About two months
down 1he road, you run into
them down at the' local
pizza parlor, where they are
sha.ring a medium sausage
deep dish with extra cheese
and guffawing about what a
stupid idea their bet was
anyway.
As I considered these
matters the other day, I be-
came somewhat distraught. I
knew I wanted to lose
weight, but I wasn't sure
how I could do it.
That's when 1hc phone
rang. It was an old friend,
and he had a fresh idea.
~s it happened, he had
just finished losing some
weight himself. Twelve
pounds, to be exact. And he
did with no exercise and no
dieting. _ ·

T wo Newport Beach women took their concern for their
health into their kitchens and changed the way they cook,
eat and feel.
Patti von -Hen~le and Joan Wren recently put their more than
260 recipes into their cookbook "Alternatives: Recipes for Health
Conscious People."
In addition to the wide variety of recipes, there are tables of
food-count values to aid the reader in conforming to a
designated diet. Calories, fat, protein, carbohrcfrates, sodium and
chofesterol are all precisely measured, the authors say.
The following recipes are the authors' favorites that they invite
readers to try.

GINGER SOUFFLE
• v. cup sugar
• I tablespoon flour
• ~ cup low fat milk
• l egg yol k • I tiililcspooo light corn oil maraarinc
• I tea!>poon rum • w teaspoon grated fresh ginger
• :! teaspoons minced crystallized ginger
• S egg wh11e~ Spray the insides of 6 ramekins w11h vegetable spray. In a small saucepan,
mlX the flour with I Vi tablespoons sugar. Stir in milk and bring to a boil.
Cook for two minute stirring constanfly until very thiclc. Remove from heat
and add tgg yolk. Cook over moderate neat, stimng constantly for I minute.
Remove from heat and add margarine, rum and both gingers. Place in a bo\\I
and cover \\llh plastic wrap. Cool 15 minutes. (This can t>c done two days
ahead and refrigerated. Bring to room temperature when ready 10 use.)
Preheat the oven to 400 degrees. Beat egg whiles until sofl peaks form. Add
the rest or the sugar and beat until stiff. Fold whites into the milk mixture and
when blended, pour into ramekins. (This can be done up to 2 hours ahead of
11mc.) qx>k in the upper part or the oven for 10 minutes or until &olden.
Serves SIX.
TOFU VEGETABLE CttSSEROLE
• 6 slices sourdough French bread • ,. .v. pound firm tofu • 2 teaspoons canola oil • 3 cups broccoli florets
•I cup green onions. chopped
• I \.7 cups egg subsC11ute • v. cup skim milk · • v. teaspoon basil
• ~ tcaspo<>n garlic powder
• \."J cup reduced fat cheddar cheese. grated
CoJI a 9'13 inch bnkmg dish \\1th vegetable spray. Place bread on the
bottom of the dish. Press moisture out of th~ tofu by wrapping ii in a dish
towel or paper towels. Chop and sprinkle tofu over the bread. Saute the broccoli and onions for 3 mmutcs 1n the t.'.lnola oil. Place on top or the bread.
Combine the egg sub 111ute, milk, basil and aarlic. Pour O\'er the broccoli and
chill covered for 2 hours. Bake at 350 degrees for 30 minutes. Sprinkle cheese
over the top and bake uncovered for 5 more minutes. Let stand :.t few minutes
before serving. Serves six. '
(Altcrn:111ves: Substitute two cups chopped zucchini :ind I cup sliced •
mushrooms for the broccoli.)
TOFU TOSTADAS
• I 10 Vl-ouncc package firm tofu
• I cup onion, grated • 3 garhc cloves, cru~hcd
• 2 tablespoons chilies, diced
• I medium tom:iro. diced small
• \.7 teaspoon chili powder
• I teaspoon cumin
• 6 com tortillas
Wrap the tofu in several loiycrs of paper towels. Phtce on a plate and cover
with another plale. Set a heavy object on top in order to squeeze out the
moisture. Leave for I hour and then grate.
S:iute the onion and garlic 1n a sJdllel, coated with a non-stick spray, until
tender. Add the tofu and cook for S minutes stimng constantly. Add the
chilies. tomato, chili po"dcr and cumin. Cook until thoroughly heated. SJ>rcad
the tortillas 0 .1 aluminum foil coated with vegetable spray and bake at 350
degrees un11l slightly crisp. Top with the 10Cu mixture.
Garnish with bowls of the following: chopped lettuce, chopped olives. dked
avocado. chopped green onion, grarca reduced-fat jack cheese, salsa.
(Altcmauves: Use Y: p~ckagc taco scasonin& instead or the cumin and chili
powder. or use the spices of your preference.)

Childhood asthma ma y be more severe
Asthma in childhood may
have become more
common, more severe
or a combination of
both, according to a
recent study published in
Pediatrics.
In 1986, 4 .3 percent of
children younger than 1 Br years of
age-or 2.7 million-were r~ported
to have asthma. In the same year,
children with asthma missed an
additional 10.1 million days from
school, spent 7 .3 mtllion
experienced more severe
functional disability and had more
frequent hospitalizations than
white children.
"Almost eight percent of black
children with asthma were unable !O perform m~jor activities, which
1s five times greater than the
percentage of white children with
asthma and 25' times greater than
that of childre n who did not
suffer from the condition."
