'Champagne
wishes and

• EDrTOR'S NOTE: We asked Phil Crow·
ley, managing director of the Ritz restau·
rant 1n Newport Beach's Fa~ion Island,
five easy questions about champagne·
What does the most expensive
bottle of champagne go for?
"That depe nds on the si7e and
vintage of the champagnt~. A stan-
dard 750ml bottle like Low s R()(•d·
erer or Cristal Rose can go for
$300. Older-vintage Bourdedux can
go for thouscmds of dollars dt ?uc-
tion."
What should good champagne
taste like?
"There should be a complex ele-
gance with citnc tonei. and biscuity
flavors. Bad champagne tastes
nutty, metallic or has no flavor a t
aU ."
Is there an art to opening a
champagne bottle correctly?
"You should shake the bottle a s
little as possible. The trlck is to
twist the bottle while holding the
cork steady .•
Wh21t is the best way to get rid
of a champagne stain?
•Alter blotting out the excess
liquid, you should JUSt lake it to tbe
dry cleaners.•
Is. there really going to be a
champagne shortage for New
Year's Eve 20007
"I think that is a story bcmg
fueled by churnpagne suppher.:.
Only the most coUcc tible bottle

need to learn Englbh? That is a
tough one. I thi!lk it is a prionty
in our community, but 1 don't
know who would pdy for. it.
Should school·sites hdve atter-
school programs that combine
technology and sporu. activities?
Yes, on my best dream list they
should. And should students wilh
special needs and talents be
receiving the educdtion that they
require? l thought that it was a
stdte l~w that we provide that
NlucaUon for them.
Gay's list i5 wonderful. but
basically what it points out 1:s that
for all the things we need, we
JUst don't have enough money.
And I think that that is the prob-
lem m the district nght now: We -
want the sun, the moon, and the
stars, and we just cannot afford 1t
all. Parents are going to have to
start mdk.ing tough choie<:!>

Fust let me thank you tor the

Insight mto the real worJongs of
the district is dlways mformativc
You ask about our vision for the
distnct and·llst a number of
questions. I fi.nd the gener<.1.I M ter-

require more than I could do via
the hotline So l chose to send
this e-mail
1. l believe that the d1stnct
should not be content with 1ust
meeting the stdndards. We
should set d vision that is much
grander thdO that, We should :set
a standard that 90% of our stu·
dents exceed the standard. (1
would like to say 100%, but that
then opens the whole <fobatc that
.some children cannot meet th~
standards and whdt do we do

requires a high degree of pdTent

we htHI a high degree of parent

80% act1vt> pd.rent involvement

would like to set that lo 90% or

likely something the Port Moody Blues

The Eagles opened the third

We have four or five guys who

Estancia soccer quickly
returning to the dominant
style of last season.
JMO~ lhu.

COSTA MESA -The fin.t few
games ol any seetson are often
used lo work out some of the
kinks. In the case of the Estancia
High boys soccer team, some
players are conung out of other
sports while others just fl.rushed a
fall schedule with a club team. It
will take a few weeks to sort
Uungs out.
Once they do, the Eagles will
be dangerous
"We tend to donunate every-
one we play,• Coach Steve C ren-
shaw said. "But sometimes we
have trouble gelbng the baU m
the net against some tedlT\s early
in the season.·
One reason it will only take a
tew weeks for Estancia, which
was 14-5-1 last season cmd
reached the CLF Southern Section
Division IV quarterfinals, is the>
level of experience on the team.
Although some key losses
have hurt the defense, most of the
players on the roster have playeo
together for a long time So it's all
a matter of fine tuning the tean .
"It's just like golf,• Crenshaw
said. #A slightly '..'II'ong turn ut
inches on the swing can havl! /1
mulb.plying effect. C urving shots
(in soccer) which would normally
go m the net bounce off the post
instead.·
If the Eagles can pull together
as quickly as Crenshaw believe!'>
they can, Estancia will be an ear-
ly force to be reckoned with and
will be well-prepared to chal·

Pacific Coast League title.
As for the offense it.sell, Junior
E'saul Mendoza, a midfielder, has
emerged as the catalyst tor
Estano~. He's not big, but h.is
size mukes no difference," Cren-
shaw said. •He has et way ·or

field. One team's coach came to
