schedule
change
• L.A. Fair floats idea of
new date that would
conflict with local event.

COSTA MESA -Orange
County Fair and Exposition Cen-
ter officials have been asked to
evaluate the impact of a July date
for the Los Angeles'County Fair,
which has always been held in
September.
But moving the date of the Los
Angeles Fair would coincide with
the Orange County Fair's tradi-
tional mid-July scheduling, creat-
ing problems for both, Orange
County Fair General Manager
Becky Bailey-Findley said

of Fairplex, where the Los ;\nge-
les County Fair is held. asked
Bailey-Findley in an October let-
ter to evaluate the impact of mov-
ing the L.A: Fair to July because
the California Horse Racing
Board had requested the fair con-
sider a change of schedule.
Bailey-Findley responded to
his request by outlining the diffi-
culties the fairs would have com-
peting for vendors, concession·
aires and attractions if theiJ
schedules overlapped.
She also indicated it was

Theriot a1Tested on suspicion of spousal abuse

commissioner allegedly
bead-butted bis wife.

board candidate and planning
commissioner Brian Theriot was
arrested on suspicion of spousal
abuse Wednesday night at his
Paloma Drive ftome, authorities
said.
Theriot. 39, apparently bead-
butted his wife in the face during
an argument, those familiar with
the incident confirmed.
Police arrived around 7:10 p.m.
to find the woman had suffered
•traumatic injury• to her face,
including a small lacerftion on
the inside of her upper lip, Costa
Mesa police Capt. Tom Lazar
said.
Theriot bas been manied to his
wife, Melissa. for 10 years. Police
took him into custody after she
made a c1t1zent1 arrest. Theriot
posted $10,000 bail Wednesday
night and was ordered to appear
in Harbor Municipal Court on
Jan. 6.

Theriot had reportedly been
drinking before the alleged
assault, Lazar said.
Theriot., a businessman, is a
former Costa Mesa Planning
Commissioner and a former city
council candidate.
He recently lost his bid for a
seat on the Newport·Mesa Uni-
fied School Board to Dana Black.
His candidacy was endorsed by
the Tustin-based Education
Alliance and the Costa Mesa
Republican Assembly. Appealing
for votes. he once said, ·New-
port-Mesa community memhers
know me and tru.st me as a busi-
nessman, coach, and family
man."

tainment and sped.al deals, will

Christmas Walk ornaments and
T-shirts, coordinating volunteers
and making sure the six bands
perform on schedule.

that she'd love to serve as its
chainnan again next year.

dential and childhood connec-
tions to the area drive her to stay
involved in community activities
such as the Christmas Walk.

• 1500 blodc of Adams Street: SSO in cash was stolen from a
car impounded at a towing yard.

window and entered a tran~ission shop. No property was
reported stolen.
• 1800 blodc of P..tc Avenue: Bicycle' equipment worth $20
was stolen from a bag attached to the handlebars of a parked
bicycle.

What makes a pasta pass
muster? Semolina -pale yellow
flour ground from durum (hard)
wheat. The good stuff bas more
semolina, less common flour and
starch. The cheap stuff is just the

can taste the semolina. Good pas-
ta has a subtle, nut-like taste.

entries to the Imagination Cele-
bration Poster Contest, spon-
sor~ by the Orange County
Performing Arts Center and the
county Department of Educa-
tion. .
The contest is part of the
annual Imagination Celebration,
a 16-day, county-wide festival of
the arts for children and their
families. The event will run from
April 26 through May 14.

water looks like someone poured
Palmolive Uquid into a Jacuzzi,
you've got the cheap stuff.
From now until the day you go
on to your greater reward, you
will get along fine with just two
brands of pasta. I shouldn't name
names, but what the heck. Ron-
zoni and De Cecco. Ronzoni has
been around since the Pleis-
tocene era. Good quality, excel-
lent texture, better than many of
the trendier, inore expensive
brands. Ronzoni would like you
to think it's imported. It isn't. In
fact, it's now made by Hershey

check-o" by the way. In Italian, a

De Cecco has aiso been
around forever. You'll see it in a
turquoise box with gold stripes
and a picture of a very buff peas-
ant woman holding two bundles
of durum wheat. When I was a
little kid, I thought the woman on
the De Cecco box was also Lady
Liberty.
One day in the first grade, I
asked my teacher why the De
Cecco lady was also the Statue of
Liberty. Sister Mary Patrick was
not amused but the other kids
laughed until they fell out of their
seats. It was my first successful,
Environmental group files suit against Coastal Commission

A lawsuit filed last week by
three local environmental
groups says proposals for
more Newport Coast develop-
ments closer to the ocean
would violate the environment
as well as state law.
The Friends of the Irvine
Coast, the Laguna Greenbelt
and Stop Polluting Our New-
port filed the suit Nov. 27
against the state Coastal Com-
mission for approving the
plan.
The proposal, which came
before the commission Oct. 11
as an amendment to a 1981
plan, asks to shift commercial
development closer to the
shoreline and to allow guest
houses on residential lots.
The suit accuses the com-
mission of violating the state
Coastal and Environmental

your super'market cooler couldn't
hold a candle to a quality dried
pasta like De Cecco. In Italy, peo-
ple rarely eat fresh pasta, with
the exception of gnocchi, which is
made with either ricotta or
mashed potatoes. They much
prefer dried pasta as daily fare.
As far as cooking is concerned,
certainly there is no one left on
the planet who doesn't know
what "al dente • means. Cooked
pasta shoul4 resist slightly when
you bite into it. And please, don't
lhrow it on the wall. Who came
up with tha.f anyway? Ridiculous.
Don't cut it and look at it like a
lab specimen. Don't drape it over_
the side of the pot to see how
well it hangs. Just taste it.
Remember, al dente.
Sauce is for another day, but a
quick tip: Most people use much
too much sauce. ltalian visitors
are amazed at the amount of
sauce we ladle on a dish of pasta.
Sauce should flavor yotlr pasta,
not drown it.

Christmas Walk, drawing

tainment and special deals, will

for the walk," she said, noting
that she'd love to serve as its
chairman again next year.

The cheap sfulf is stark white,
slippery and has almost no taste.
Again, that's because it has much
more.common flour than semoli-na. which also means much more

foam as the pasta cooks. If your
water looks like someone poured
Palmolive Liquid into a Jacuzzi,
you've got the cheap stuff.
From now until the day you go
on to your greater reward, you
will get along fine with just two
brands of pasta. I shouldn't name
names, but what the heck. Ron-
zoni and De Cecco. Ronzoni has
been around since the Pleis-
tocene era. Good quality, excel-
lent texture, better than many of
the trendier, more ~xpensive
brands. Ronzoni would like you
to think it's imported. It isn't. In
fact, it's now made by Hershey

Environmental group files suit a gainst Coastal Commission

A lawsuit filed last week by
three local environmental
groups says proposals for
more Newport Coast develop-
ments closer to the ocean
would violate the environment
as well as state law.
The Friends of the Irvine
Coast, the Laguna Greenbelt
and Stop Polluting Our New-
port filed the suit Nov. 27
against the state Coastal Com-
mission for approving the
plan.
The proposal, which came
before the commission Oct. 11
as an amendment to a 1981
plan, asks to shift commercial
development closer to the
shoreline and to allow guest
houses on residential lots.

Adams School is presenting an

the multipurpose room. Mn.
Jleverveon. a teacher at Adams Schoof, is the director. Mrs. Fever-
geon loves teaching because she
loves children and drama made
for kids. Mrs. Fevergeon enjoys
the students she works with every
day and in drama classes on
Wednesdays.
The play is called "The Stolen.
Flag.~ The play is a made-up
mystery. The play is about kids
who are txying to find out who
stole their flags at their school. It
is a patriotic play combined with a
musical. Fourth and fifth graders
are backup singers while the sec-
ond and third graders are putting
on the play. The costumes are
going to be made and provided
by parents.
· The music is done by Kathleen
Chapman and the choreographer
is Nancy Matosstan. Gregory Les
is the main character in the play.
Special guests are Mrs. Harring-
ton (principal) and Chris Galegos
(custodian). Understudies are

donned rubber gloves and dis-
sected a cow eye.
Bach part was carefully dis-
sected, identified and placed on a
card for display. This program
was made possible through the
California Science Project of UCI
along with mentors from the Dis-
covery Science Museum. Local
Newport Beach optometrist, Dr.
Toman, also lended bis expertise
with the dissections. We are so
fortunate to be part of this pro-
gram!

During the month of Novem-
ber, Andenen School was really
busy collecting canned goods for
the Salvation Army. Altogether,
we collected about 13 huge boxes
of food. The student council
worked very hard collecting, sort-
ing, and boxing the food, then
loading it into the truck.
Andersen's kids, parents and
teachers are all really looking for-
ward to Andersen's annual school
play. This year it is going to be an
original musical comedy. lb.is is a
great way to earn money for our
school, and let the parents, rela-

trict. This achievement is a credit
to our outstanding teachers and
the involvement of our parents as
well as our fine student body.
The Bicycle Rodeo was real
popular here at Andersen. I think
that peoplelike this event because
everybody ends up a winner.
This month, the third grade
classrooms (Mn. Wood and Mr.

NBWPoRT BEACH -With a solid future
seemingly intact, Newport Harbor High boys
soccer coach Ziad Khoury is already thinking
about ring sizes.
Khoury, the Sailors' first-year head coach
who started the highly succes9ful Orange
County United club program in the area,
belle'(es Newport Harbor soccer is on the
brink'of CIP Southern Section prominence. • I'in training all the younger kids,• said
1 Khotlry, whose 13-and-under boys team, the
I Slammers, :won the prestigious Surf Cup in
San Diego last summer, a national event.
•From all of these youth teams, you're
going to see a lot of CIP rings when they start
coming into our system."
Hor now, the Sailors will settle for more
modest goals, like being in the Orange Coun-
ty Top-10 poll, reaching the qual'Jmfinals in
the.QP Playoffs again, and competing with El
o, Woodbridge and Santa Margarita in the
View League, considered the toughest
league in the county.
Last year, the Sailors set school records for
victories (20) and shutouts (11) in a season,
while forward Justin Kerr (Princeton) broke
the schOOl record for goals in a season (47) and
then-freshman goalkeeper Zach Wells broke a
school standard for saves in a se~on (82).
"He's going to be the franchise for us for a Jong • time,• Khoury said of Wells, a sopho-
"more. "He did some incredible things in CIF
last year."
"Ihough Newport Harbor is not in the coun-
ty's preseason top 10, it features two of the
county's most reauited players in senior mid-
fielders Garrett Jansma and Tobin Junowich. t "He's a phenomenal player, he's on
Alessio's level," Khoury said of Jansma, refer-
1tring to former Sailor standout Alessio Smith, a
~starter for Cal State Fullerton. • (Junowich) is
-1probably our most improved player.•
'f· Junowich last summer played for the Cerri-
Ltos Brigade, one of the top club teams in the
trnation, a team that traveled to France to com-
~-pete against professional clubs.
;, "He's probably the most skilled guy I've
seen," Khoury said of Junowich. •He's very
t poised in his distribution and he has a deadly

shot. He's going to be our go-to man in the
shooting aspect."
Newport Harbor, 20-6-4 overall last season,
finished third in a tough Sea View League
behind champion El Toro and runner-up San-
ta Margarita. El Toro, Santa Margarita and
Woodbridge return the nucleus of its starters
this year. All three are ranked in the county's
top-10 preseason poll.
The Sailors last season in the playoffs won
a wild-card game against Laguna Hills, then
upset second-seeded Santiago and defeated
Riverside Poly in the second round, before
finally losing to Canyon Springs in the quar-
terfinals at Kaiser School.
They will return 10 players from that squad,
including five starters: Jansma, Junowich,
Wells, junior sweeper Brett Baker and senior
outside fullback Scott Takabeny.
·That kid is one of the most athletic kids
I've ever seen in my life,• Khoury said of Bak-
er. ·1 can't wait until they finish football sea-
son so I can get him back.·
Other returning lettermen expected to start
in Khoury's 4-4-2 scheme include juniors
Austin Ahlgren (fullback) and Eric Werner
(stopper), and outside fullbacks Lee Hernan-
dez (sophomore) and Chapin Kreuter Ounior},
who will split time. Senior Chris Wa.kim,
another returnee, should be a starting cen-
ter/forward.
"We had a deep bench last year,• Khoury
said. uEven without Justin (Kerr), we could
win. This year, we don't have as much depth,
but we have heart.•
Three of Newport Harbor's top newcomers
include· senior center/forward Ariel Gavilan,
junior forward Joseph Schloss and sophomore
midfielder Manuel Opersso. All three are
expected to start.
Even though the Sailors aren't quite as
deep as last year's record-breaking team, they
should contend for a playoff spot with Jansma
and Junowich at the controls.
"Of every goal we scored last year, either
Tobin or Garrett was involved in the assist,"
Khoury said. "They're big-time players, and a

Letter to the Editor
After reading Jim Walters' column in Monday's Daily Pilot.
I felt compelled to respond. It is well known that the Daily Pilot
is now owned by the Los Angeles Times which spol'U section is
headed by Notre Dame graduate Bill Dwyre. It is also known
that his allegiance is towards Notre Dame and not our local
universities USC or UCLA.
Now with regard to the article. I was there and l was in the
tunnel after the game. I must tell you that this •unmerciful
jeering• described didn't occur. This is another gross
exaggeration by. a biased individual or an uninformed member
of the media. I believe your readers need to understand what
playing at Notre Dame stadium is all about. The jeering is the
easy part. It is the throwing of bottles, food, snowballs, trash or
anything the fans can get their hands on at the opposing team
or their coach.
l find it very difficult to sympathize with Lou Holtz or any
fan of Notre Dame for having lost this football game. To make
reference to the •weight of this season career ending loss,•
after having won 11 straight makes findlllg sympathy difficult
for anyone. Not a bad run, not a bad run Notre Dame, very
difficult to get any tears from rne.
Next, is the description of Lou Holtz' mentor Wade Watts.
Wade may be a delightful guy, and still may be a very dapper
78 years old. I do however, find it very hard to feel sony for his
aching knees since he watched the game with a sideline pass,
something most people would kill for. But even more
importantly, if was "bristled by the taunting,• what kind of
example did he show to the young people today by giving the
finger to the fans? Is this the way you answer the ·collective
eye in the fervor?" ls this what you want to teach young
people? Is this the example we want to set for Pop Warner kids,
to say nothing of High School or College kids? Nice image
Wade, nice image.
By the way, if the rules regarding overtimes were as last
year, then USC would have a winning record with two ties and
be offered a post season Bowl game.
Lastly, if this journalist, Mr. Jim Walters became a little more
of an investigative reporter he might be able to tell us why Lou
really did leave Notre Dame. Why don't you dig a little deeper
Jim. Why don't we find out the real truth and see if some of
these rumors are for real. But most importantly, let's write the
truth and let's always look at the other side of the story as well.
Even more importantly, it is only a game. We should think
about sportsmanship, we should think about examples and let's
keep our fingers in our pockets.
