students get lessons in the
kitchen and how to comport
themselves at the table

I chose an unlikely crew of four
freshman boys to observe who, as it
turns out. ran an efficient kitchen
and made delicious biscuits.
As they'stood at the counter in the
school kitchenette, each boy took a
position based on his duties.

Only one little problem -they
forgot to set the timer. But, no wor-
ries, J essie remembered in time.
Unfortunately. he then proceeded
to learn what every cook does at
some point -those oven mitts that
you're supposed to put your hand
into do not work. I n less than an hour, students
made heart-shaped biscuits from
scratch and ate them with jam
and butter at a properly set table.

Knieriem's cooking class at Estancia
High School on Monday morning, it
was straight to work.
Abel Bustos, 14, acted as the chef
on the project, with Juan Hernandez
assisting. The other two had their
own jobs: Jessie Moreno, 15, was ttie
#waiter" and charged with setting
the table, and Omar Montillo, 15,
was on cleanup detail. All four read
directions and gave advice freely.
Appji.fently, no one found it
strange, however, when Juan mea-
sured the stick of butter by squishing
it into the measuring cup, wrapper
and all, instead of just reading the
package. Whatever works for them, 1
guess.
There was a bit of dissension
when it came to kneading the
dough. In fact, Juan was replaced as
kneader when the other three
agreed he was doing it wrong.
The most impressive thing I
observed was Knieriem coaching
them on proper etiquette and man-
ners -something they picked up on
beautifully. Bravo.

Council members will
review a Nov. 9 decision by t~e city's planning commis·
s1oners to revoke a permit
for the Buzz restaurant.
Commissioners had found
that the restaurant's man·
agers violated the terms of
the use permit by removing
arcade·type video games
from the premises. In 1998,
commissioners approved
the restaurant on Via Opor-
to by granting a waiver fpr
41 parking spaces. Arcade-
type businesses require few-
er parking spaces than reg-
ular restaurants and dance
clubs.
Representatives for Buzz
appealed the commission-
ers' decision to the City
Council, which will have the
final say.
What to expect: Council
members will either uphold
the commission's decision or
grant the appeal after hold-
ing a public hearing to dis-
cuss the revocation.

Councit members will dis-
cuss hiring a public informa·
tion officer for the city. In his
report, City Manager Homer
Bludau wrote, •to date, the
city's dissemination of public
information has not been
well organized.,. He added
that while individual depart-
ments, such as the fire,i
police and community ser-
vices divisiors. already had
similar positions, the city as a
whole does not.
Bludau recommends that
the new spokesman or
spokeswoman mainly focus
on involving residents in the
general plan update, whrch is
expected to take place over
the next few years. Bludau
proposes spending between
$81,495andS110,604 on the
new position, which includes
salary, benefits and a work-
ing budget.

firefighters has been
patrolling the area from two
hotel rooms since Jan. 29.
Previously served by the
Orange County Fire Authori-
ty, emergency response
times had dropped below
acceptable standards after
the county fire station was
damaged in a fire in Decem-
ber. City officials propose
setting up a trailer at a park-
ing lot on Dove Street. The
estimated cost is $608,860
for the 2000-01 fiscal year.
Part of the cost could be
recuperated from the coun-
ty, which still oversees Santa
Ana Heights. Newport Beach
is expected to annex that
neighborhood by next year.
What to expect: Council
members may either
approve or reject the plan.
STARBUOCS EXPANSION
Council members will con-
sider an appeal by Starbucks
of a Planning Commission
decision that more than five
additional parking spots
should be required for
expansion of the chain's cof-
feehouse in Corona del Mar.
The commission. however,
did not specify how many
additional spaces should be
required. The project
inc;ludes adding nine seats to
12 existing ones indoors and
four to the existing eight
outdoors. By renting a
vacant store next door. the
coffeehouse also would add
separate bathrooms for men
and women.
What to expect: City
staff members have recom-
mended that the council
deny the appeal and uphold
the commission's decision.

tion between the two. They volun-

younger children. While-some
thought drugs were one of the

able to have a good time without
using them. It was so mspmng to
talk.to these kids. and it gc1ve me
such hope for the future thdt my
fellow Judges relieved me of my
task as the tunekeeper. Seven min-
utes just wasn't long enough.
So, what k.mds of trees did the
kids want to be? One said d Money
Tree, so he wouldn't have to wony
about money as the quantifier of
success in tus life. One wondered if
he was a sturdy 0c1k or a bending
willow. He decided he was fairly
opinionated and too much of a
straight arrow lo qualify as a wil-
low. A boy Wlth an especially
stressful schedule wanted to be a
big, leafy tree in the forest, where
be could JUSt relax and sway in the
breeze. A young lady wished to be
a mighty redwood surrounded by
the beauty of the forest. A football
player thought h e would be a
sequoia, start:J.ng out small and
slow, but developing over time to
the mightiest around him. One
wanted to be an acorn tree, to pro-
vide food and shelter to others.
The banquet to announce the
wtnners will be Thursday. I think all
of the district students who partid·
pated in this activity were winners,
regard.less of whether they take
home a medal.

nculum: textbooks. academics and demeanor
in the classroom.
"Snow Falling on Cedars" fdlls to meet
appropriate standards due to 1ts numerous
passages of 'an expllat sexual nature. which,
wtule tastefully done, place the book 10 the
adult-reading category No ont> is condemning
the book br calling for bd.nning it. Equating
the objections to 1t as a textbook as such, and
charactenzing Leece as a fasnst or would-be
book burner, is not only patently unfair, it is
totally without bastS m fact
There IS no doubt that "CedMS" does not
compare in the least lo lhe objectionable
material young people can reacWy access else-
where. However, we're talking dbout lhe
school district, responsible for Uw material it
approves for duldren. That matenal certamly
needs to be more than a cut above what pre-
vails elsewhere in toddy's pennissive society.
In addibon to the sexual content contained
in ·cedars,· there are also numerous pd.S-
sages containing profanity and obscene lan-
guage which. although they may represent an
accurate description or the real-life situations
depicted, nevertheless have no place · e
approved school curricul

fear, ignorance, hatred and prejudice of a
community toward Japanese American citi-
zens and residents dunng and aft~ World
War II. 1bis' results in a rush to judgment of a
Japanese man in a murder trial and the efforts
of two journalists to counteract iL
1ifowever, there is a subplot invotving the
clandestine love affair between two teenagers.
Therein lies the rub. The explicit sex scenes, no
matter how tastefully or delicately presented,
are by their explicit nature unswtable for
teenagers who, in general, are notoriously
unreliahlo when it comes to handling their pas-
sions and Impulses 1n a responsible manner.

The commuruty owes a debt of grnbtude to
Leece for her unwdvenng comrrubnent to
quallty, age-appropnate education for all lhe
distnct's students. Her willingness to put m the
time, energy and research to that end sets her
apart as a person of extraordinary dedlcabon
and mordl courage. Those who critiaze and
vilify her for her stand need to step back,
examine lheir motives and take a deep breath
I appedl to the community dfld the Daily
Pilot not to make a religious issue of this. It is
not about religion It IS about age-appropriate-
ness or adult matenal bemg ddvocated for
children. The school district IS charged with
protecting our ctuldren while in the classroom.
Whether or not duJdren Me exposed else-
where to such mdterial (and worse) every day
is not the tSSue.
I also ask lhe Daily Pilot, how representa-
tive of the total letters received are those they
printed? The,printed letters were 9 to 1
against Leece's stand. A poll taken by another
publication reported that of 174 responses,
66% would not like to see the books approved
for use. In another Letter to the Editor (Daily
Pilot. Jan. 30), the 78-year-old wnter said she
had been reading since she was 3, and she
saw no problem with Uus book. I dare say she
did not have access to matenal or thJs nature
through her school when she was growing up.
As trustee David Brooks said: ·u•s very sun-
ple ... there are other things out there that
make the same points without giving such
graphic depictions of the sexual type• (Daily
Pilot, Jan. 25). Whatever sodally redeemlnq or
literary qualities •cedars" may be deemed to
possess, it is no mastetpiece by any stretch,
and it reaches beyond the boundaries of
acceptability for inclusion in a high school

If one person can effect the removal of even
one title, he or she will be back for more books

worthy of being read, by young adults, the11 par-
ents and grandparents.
The true lesson to convey to students of all
ages is to read. You don't bdve to agree with
everything that you read nor even like 1t. But
don't close your mind or attempt to prohibit oth-
ers from reeding anythmg that nusy not t1'WTOr
