I was not feeling good at all, and this was not helped by the fact that I was about to shoot cr<.>w. Crew rs difficult to shoot because 11 1s hard to get a good vantage point. as the race is far from shore. I was able to hop onto a boat to get closer, but after two hour:s of shooting, I feared all of my photos were going to look lhe same. Not a prob· fem ii they only needed one photo; but I knew the sports editor would want to fill a whole page. Orange Coast College had racked-up a number of victories in the morning's races, so I hung around on the pil!r, hoping there would be a celebration. But ii was pretty low-key as the teams were washing and drying their boats. I was about to leave when I heard cheering from the boat house. When he started working at. Roy's in Honolulu more than 10 years ago, he'd wash dish- es and clean the hoods above stoves just to be where the action was. Then he'd start his real shift busing tables reeking of fish and sauces. One day, a line cook bailed. The head chef said, "get your butt in here." So Gamier donned a chef's jacket that fateful day and hasn't taken it off since. Today, as the executive chef at Roy's Newport Beach, Garnier still uses valuable lesso"'> he learned from Roy Yamaguchi on fusion cooking. DP: What are some lessons or secrets you learned from Jloyf G: Basically, making sure every- thing that you do cook, you must respect. And it involves not only you. but your team. You're one of the team players -your line cook is your line backer. DP: What do you mean you -..should respect what you cookf G: Your passion for the food. You put yourself and effort in making that one dish or making that one sauce. His secret is consistency -without consistency, a restaurant won't suc- ceed. Everything has to be consistent each time. He would get totally angry at other cooks who'd just be putting up the food. No matter how fast you're getting slammed, you have to put your heart and soul in everything you're making. DP: What do you most Uke to make' G: Right now I'm on a fois gras high. I like miso yaki, marinating [the fois gras in) that, then we grill it. Usually what we do here is we serve our miso yaki chili and white fish. And I just took that form and miso'd the fois gras so it has a real nice tex- ture. It's very unique tasting and adapts very well to Paofic Rim kind of fusion cooking. DP: Do you have a favorite cook- ing toon G: You know what I Jove? Does this help you cook fusion foodf G: The majority of me is Chinese. I know I have my feel for the Chinese cooking. That comes out-because the dishes I create are family oriented. My vision of the dish is to be when it's presented at the table for a family. The sense that I want the whole table to experience all the flavors that I've put into each dish. The flavors is what Roy instilled in us -if you make something that has a whole bunch of words in it, you're supposed to taste all the words in it. I like to keep everything simple. but I like to use the fusion to get everyone's attention. Basically we base that on maybe they're on a strict diet -no oils -everyone out here I've seen is allergic to peanuts and no butter or cream. I find it very uruque. 1 kin- da find it almost challengmg because I like to see what the fusion chefs do also. Meaning, m a food-wtse sense. two different ingredients fused together to make one -it's very challenging. It's very unique when I see other chefs do that also. The shots came especially fast and funous about five years ago, when we ledmed that IRWD ledde rs had plans to pump mLlbons of gdllons of treated sewage water mlo the Back Bay. Their pitch the n was that the water would be used to refresh the duck pond marshes on the edge of the bay. But Newport Beach city leaders and e nviron- mentalists. most notably Defend the Bay founde r Bob Caustin , complained that the bay and harbor were no place for treat- ed sewage And they rightly pointed out that IRWD officials may have had a bigger mollve, namely to save $20 million by not having to find other places to get rid of the treated sewage water. After a couple years of law- suits and salvos. IRWD lost the battle, and its name has since been tarnished by the sludgy. sewage d ebacle So it's understandable that some locals would be skepucal of a recent bill by new Assem- blyman John Campbell that would give the water district control of the urban runoff that floods into San Diego Creek. which in tum feeds into the Back Bay. IRWD officials hope to apply the models used in the San Joaquin Marsh as ways to reduce the nitrate levels and sediment buildup that has long created havoc for the Back Bay's ecological well being. lnunediately some have sur- mised the IRWD shouldn't have that much power and should stay out of the eco-business altogether. Maybe that's true, but we're not sure we all have the infor- mation to make that decision just yet. After all, the San Diego Creek does wind through the water district's property, so offi- cials there clearly have a stake in its well being. U this plan does indeed have merits and would serve the greater good of preserving the Back Bay, isn't it worth explor- ing, no matter who is pitching the plan? If Campbell and lRWD offi- cials have a good plan to clear up the runoff problems in the Back Bay. we all want and need to hear it. Likewise, environmentalists and other local lRWD antago- nists need to give the district a fair hearing, before the bigger goal of protecting the Back Bay gets lost in political or legal battles. Debating the price of history A s city leaders conunue to debate whether to spend hundreds of thousands of dollars re novating the controversial Huscroft House. they have yet to present a compelling argu- ment about the building's his- toric significance. The idea of a cultural muse- um in Costa Mesa is a worthy one. With the city becoming more and more of a cultural center in the county, having a home for the city's history and cultural heritage is a fitting addition. But the question remains: ls the Huscroft House the right building for lt? Yes, the house has been a • part of Costa Mesa for all but one of the years the dty has exiJted. I find this extremely disturbing, but its root has to be a function of simple awareness rather than abject !callousness. I can't imagine that any self- respecting parent would willing- ly put other children at risk because their little Johnny or Susie is late to school. Yet day after day, parents dnve too fast, most of them distracted with cell phones as they barrel their way to drop off their preaous cargo. CoMMuNriY FoRuM Sunday, April 1, 200 l 9 Fighting fires from the top Costa Mesa Fire Department veteran Jim Ellis is ready to tackle a new challenge as the city's fire chief L ast week, Costa Mesa firefighter Jim Ellis learned he would be promoted to fire chief, replacing Frank Fantino. The Michigan native, who has been with the department since 1980, has worked his way up the ranks -exactly as his pre- decessor did. Among the calls he's responded to, Ellis led the men who answered an April 1999 call to an Eastside preschool. There, he and the rest of the community were shocked to find that Steven Allen Abrams had purposefully drive n his car into the school's playground, killing two children. It was the most horrifying incident he'd seen. He takes charge as the department faces continuing and looming retirements. Still, he said, "I'm just bursting at the seams. I'm so excited to be fire chief. " Ellis sat down with the Pilot City Editor S.J. Cahn to discuss his plans for the department's future. What do you expect wtl1 be your blggest challenges as chlell One of the biggest challenges I will face as the chief will be maintain- ing the highest level of service possi- ble for the citizens, but also improving and implementing new and innova- tive ways to increase the level of ser- vice as best we can. The fire service is about to enter into a time where we will experience a large turnover - retirement -of senior fire penonnel at all ranks. l want to ensure that we asslSt our future leaders to be ready for th.is evolution. A SURE THING Although they all like to gamble, they said at a March poker night at·Guy's home that the poker group and their f.tiendship has been a sure thing since the beginning. . "This is a sounding board for all of us to talk about whatever's bugging us - our children, or our husband or whatev- er,· Ingram said. Over the years, they've shared hun- dreds of recipes and off-color jokes. They've enjoyed graduations, weddings and births together. They've also helped each other ' through the deaths of friends and fami- ly, the illnesses of their husbands and the troubles of their children. ·1 lost a daughter-in-law,· Munson remembered. "I couldn't have made it without my friends here. There's a lot of holding together, of sharing our sorrows and joys." The group members said they have even managed to avoid having a single argument in the 30 years: Even though they each have a dif- ferent favorite poker game. Even though half voted for Al Gore for president and half voted for George Bush. Even though half are USC fans and half are UCLA fans. "We always have been a tolerant group,· Atkinson said. PUNKS AND JOKES But that tolerance doesn't keep the group members from playmg pranks on one another. / The night before the qt'g UCLA and USC football games, they toilet paper one another's houses. When lngram had a baby, 13 years after haVl.llg her last du.Id. the group dressed up in baby dothes for her baby shower. "We're really not old bags," lngram said. •We still have youth in us." As a rule. they tell Jokes at every poker night. "There are three old ladles sittmg on a couch in the IJVing room," Atlunson said. "One goes upstairs to take a bath, runs the water and says, 'Am I getting in the tub or out of the tub?' Another one goes to check up on her and. halfway up, stops and says, 'Arn I going up the stairs or down the stam?' The last one sitting on the couch says, Thank goodness I'm not like her' and knocks on wood. Then she says to herself, 'ls that the front door or the back door?'· Four of them are ongmal members - Conte, 58, Atkinson, 56, lngram. 56, and Johnson, 57 -and the others. THE BEGINNING ·conte and lngram began the group in December 1970, gathering up the rest of "the girls,· all of whom had small chil· dren and most of whom chose to give up their jobs and stay home. Now, with most of the children out of the house, "the girls• have all gone to work. at least part time. Eight of the members play every time. f'an:d Charpentier is a substitute player who sits in whenever another player can't come. Aside from their love of poker, a senes of connections ties the group together. Their children went to school togeth· er, they spent time together m the PMent Teacher Association and on baseball teams. lngram, a Hallmark retail merchan· diser. is married to Conte's brother, Jim lngram. Munson, a customer service repre- sentative and supervisor at Bank of Arnenca in lrvine, convinced Conte and Guy to get the same job at the same company. Guy works at the same branch and Conte works al the Costa Mesa branch. Munson and Guy graduated from Hoover High School in Glendale togeth- er and lost contact, but became friends again after they both moved to Orange County and met Conte, who reintro- duced them. Conte's husband also went to the same high school, as did Guy's husband and Jackson, a fionst •A lot of us went to Glendale, but most of us didn't know each other then,· Jackson said. "We met again later, after we all moved here.• When Guy and her husband were visiting Conte and her husband, they noticed the house next door for sale and moved in. They have been next-door neighbors ever since. Atkinson's husband was in Johnson's wedding. Atkinson, a service representative with Continuing Medical Education Company, remembered that Johnson, a security guard at Edison High School in Huntington Beach, had mentioned at the wedding that she played poker and invited her to join the group. Deutsch, a part-time employee at the Eder Care Referral A!Jent:Y, once worked with Atkinson at Edison High School. TAKING TURNS The full-time group members rotate houses so they each get a turn to play host. Seven out of eight poker nights, Ingram drives a half hour each way, because she lives the furthest -Laguna Hills. "The eighth time, all of them have to drive to my house,• she said. "It's worth the drive to get out with the girls, to get away from the kids and husband to see my friends. I love it I live for Tuesday every other week. "boys vs. girls .• At poker night a few weeks ago, the group members said they could hardly believe they have been playing poker together for so long. "When we started this, we were younger than our kids are now,· Conte said, receiving gasps of astonishment from the rest of ·the girls.· THE OLD AND THE NEW They said a few things have remained the same throughout the years. The music -now called •oldies· - that they listen to while they play has always included the Beatles, Elvis Presley the Everly Brothers and the Beach Boys. And the babble of tallang that fills most of the meetings has also been a constant. •we never stop talking.· said Joan Guy. "There are always three or four conversations happening at once.• Munson nodded. "One husband put a recorder under the table,• she said. ·we came out sounding like a bunch of cackling hens.• But the group members said many things have also changed with the times. "We used to smoke at the table, now we don't,• Munson said. The makeup of the conversation has also changed. "We used to talk about our little kids, then school, then marriages,· she said. "Now it's our aches and paiI1s and hor- mone intakes. And there's e-mail. And we've lea.med a lot of off-color jokes.· Another difference is their bedtimes. They used to play until 2 or 3 a.m., Conte 58.ld. The Newport resident said he recently underwent a triple bypass operation and is recov· ered enough to fish every day again. He works right near the pier, above some of the beach· "Most of the time the best fishing is done on the incom- mg tide,• said Burnham, who also uses fr~e tide books he gets from the lifeguard station. "Every day, it moves forward one hour.• He's what they call a surf- Ught-line fisherman because he uses test-lines between six and 12 pounds. On this windy day, he's hoping to catch some corvina and bard surf perch for his seafood-lovmg friends. ·1 gotta move again,· he says, whtle explaining about different fish. Setting up the practical joke is called "hunting the gowk" and the victim thereof is called the •gowk, • which, as if you dld· n't know, is slang for "cuck - oo· -the symbol of a fool for the Scots. Day two is called •Tally Day• and the pranks all revolve around the part you sit on -slipping things beneath your tush as you sit down, sticking •kick me" signs on people, etc., etc. Stop, please -yer killin' me wit' this stuff. Other historians think it started as one more celebra- tion of the Vernal Equinox, such as the Roman end-of. winter holiday called "Hilar· ia • -and yes, that's where the word comes from.
