Davis' version first arrived at
the Orange County Fair in 1981.
He has two trailers today -one
near KiddJe Land and one doser
to the front of the faJr -and his
staff chums out 1,000 to 1,5000
cakes on an average weekday
and 2,000 cakes on a Saturday or
Sunday.

G retchen Passantino wanted
to offer adults a higher
education in theology
without the ~te of a master's
degree, or the requirement that
you'd have to-end up with one.
Having graduated with a master's
in June from the Faith Evangelical
Lutheran Seminary, which Is based
in Washington but offers
extensions in South Central Los
Angeles and other part8 of the
wodd, Passantino decided to bring
her thiee years of knowledge about
Ouistianity to her own backyard.
The c.osta Mesa resident started
the Orange County extension
program for the seminruy last
spring at the Prince of Peace
Lutheran Onm:h, which is in her
own city. Because she was a couple
months shy of actually having a
masters, she taught the first classes
under the direction of a supervisor.
Since the summer session began
last week, the fully qualified
Passantino has been teaching on
her own.

Passantino said that the Costa
Mesa church invited the seminary
to begin an extension with them
because leaders wanted to provide
everyone from the littlest
preschooler to the graduate level
student an appropriate level of
learning.
"So no matter what your
learning level, there's something for
you at Prince of Peace," she said.
. "We think It's essential for a
well-rounded Oui.stian life."
"As the head of parish education
for Prince of Peace, I was loolcing
for a program that would offer
adults in the church a challenging
opportunity to learn just for their
knowledge as Ouistians or toward
an actual degree," the former
adjunct instructor for Biola and
Concordia universities said.

The summer session, which
meets at 7:30 p.m. every Friday at
the church, teaches students about
ancient church history. The spring
course focused on the book of
John, from the New Testament. The
Fall session will offer two classes -
one in New Thstament Greek and
one about the Old Thstament book

Gretchen Passantino will be teaching classes in ancient church history
throughout the summer as part of her nj!W program, Faith Evangelical
Lutheran Seminary, which is designed for adults in the church and
community who are interested in learning about their faith or are
seeking an accredited or graduate degree.
Passantino, who is also the
director and founder with her
husband of a nonprofit educational
organization called Answers in
Action, said some of the features of
modem day churches were actually
inherited from the first century
synagogue churches of Jewish
Ouistlans. Having a scripture
reading and then a message
explaining the reading comes from
this tradition. So does the prayer of
confession, a prayer similar to the
Lon:t's Prayer and the practice of
singing psalms and praise.

Looking for
strength
in ordeals

I recently spoke with friends who are in :
the middle of di.fllcult slruations. Each
shared experiences of feeling God'S :
peace and presence as they turned to him •
for strength and wisdom in their ordeals. :
One said she saw life in a difrerent light than -~
before. ult's like God has given me a new set of
eyes, or at I~t he has hel~ me to see
people and life in new ways, she said
They all asked for

connected to God.

explained. "He is also my•
best friend· :
I was praying for them ·
as I went walking earlier
this week. I left later than
usual, so I didn't pass
people I normally do and
CINDY TRANE by the time I climbed one
CHRISTESON hill and turned to the next. I realized I hadn't
passed anyone at all.
I heard a car behind me, heard a man
whistle, but I didn't look up. I turned the
comer to a spot I love because it feels
remote, and I walk on a dirt path frequented
by little rabbits.
A few minutes later a car approached
from the other direction, and I heard men's
voices yelling. I kept walking, but looked
back and could see the silhouettes of three
men. Then I realized it was the same car that
passed earlier, and then it turned around
quickly and came back. I wasn't feeling
particularly good about the situation and
·picked up my pace as I heard its engine rev
and beard the tires screech as it turned right
in front of where I was. I<l already decided if
they returned, I'd run down a nearby that
path that a car couldn't go down and that
would bring m t; out to a populated streeL
I ran a bit and looked back. The car didn't
move for awhile, and when it started off
slowly, I moved back to see if I could get a
description. I thought they were leaving, but
apparently they were watching for me, and
they swung back around. This time I took off
to where I knew they couldn't see me. but
perhaps I could get a Ucen.se plate to report
them so they didn't do this again. I prayed
for God's guidance, and for other people to
appear. I could see the car waiting in the
distance.
After about five minutes the car left as
other walkers appeared, including one
woman walldng with a dog. I came out,
realized she was a friend, and asked if she'd :

When I came home, I called the police
and gave my report. They told me I should
always waUc with a cell phone, which I will
start to do. and I'm passing that tip on to
You.
Now I pray that God would help me keep
my eyes wide open and alert to the physical
world around me. I'm also praying that he
would help open the eyes of my heart more too.

regulators ordered the
Orange County Sanitation
District to Immediately re-
duce bacteTia levels uslng
industrial bleach.
The Santa Ana Regional
Water Quality Control
Board unanimously ap-
proved changes In the
agency's ocean discharge
permit, at a Friday meet-
ing, that directs the district
to begin bleaching by Aug.
12 and tightens monitor-
ing standards for bacteria
levels in the waste plume.

into the ocean via an out-
fall pipe on the ocean Ooor
four mUes off the Santa
Ana River mouth.
By requiring the district

with chlorine, regulators

Beach and HuntlDgton
Beach can enjoy peater
peace of mind while swim-
ming in the ocean water.
"This re9uirement ls
really done in an abun-
dance of caution to protect

Thibeault, the board's ex-
ecutive director. "We
wanted to get something in
place for this beach-going
season.•
Under the new proposed
permit, the district would
be required to bleach the
sewage, then remove the
bleach using a dechlorina-
tion chemical known •• so-
dium bl-sulphite. Re-

Lorenzo Pasini, fondly known
as "Papa Loreru:o," was one of
the founders or the Spaghetti
Bender in Newport Beach.
He and he his late wife, Allie,
also owned Joyce's Restaurant,
which later became came The
Golden Bear, The 39er Cafe and
Joyce's Pantry, which is now the
Sugar Shack -all in Huntington
Beach.
Papa Lorenzo was a constant
Four hours later, I was sitting
in Mario's, a Mexican restaurant
in Huntington Beach. With me
were three of my basketball
buddies, fresh from playing our
40-plus year-old bodies to the
limit. A beer is helping but I
know that in the morning 111 be
wishing for a chiropractor.
A few minutes after we
arrived, my cell phone rang. It
was Cay and she was excited.
"They accepted the offer!" she
exclaimed. •And you're going to
love the dog!"
Over the next two months or
escrow I rode an emotional
roller coaster. Determined not to
let myself celebrate the new
house until escrow had closed, I
became tense. For a few days
down the stretch, my neck and
shoulder stiffened and were
painful. When I mentioned this
to friend Kathy Miller, she said,
"Ob. you have escrow neck!'"
I don't mind moving, having
done It douns of times over a
period of 40-plus years. I will
now tell you the secret or a

outing and reunion of
friends. In the past. my
brothers participated (on
horseback) in the parades;
my daughter celebrated her
birthdays at the Fish Fry for
all of her growing yea.rs.
We have been extremely
disappointed that a frivo-
lous lawsuit helped cause Its
cessation fro the past two
years.
More importantly, for 57
years, more than $2 million
came back to our commu-
nities. especially for our
youth, through the fund-
raising efforts of the Fish
Fry. lbanlcs to Scheafer for
speaking out. No one in the
previous letters bad men-
tioned this very important
fact.

United States during the
'50s, the outcome some
might say, was less than
sterling. The more im-

Oath" for government
workers and many govern·

When we first said the
new words in grammar
school, it sort of gave one
an uncomfortable feeling
-after being so used to
saying it the old way. Many
of us fumbled for years
about when the pause
came "One nation under
God, indivisible, with lib-
erty and justice for all." Or
was it, "One nation, under
God, indivisible : .. "
At the very heart of this
issue is not whether "un-
der God" alienates people,
but rather "which God" are
we talking about here? The
founders used the words
"Creator." "Which Creator"
are they talking about? 1
would argue they intended
it to mean "Everyone's and
everythlng's Creator," in-
cluding unknown aliens
from another planet.

eggs for breakfast. But they
rarely connect the dots between the
chicken and the egg. said Ann Raia.

It's simple, actually. The average hen

drop into a rail lining all the hen cages.
They are collected by Raia at the end of
each day in egg cartons.
Hens With red flabs of skin around
the ear Jobes lay brown eggs. the ones
with white nabs lay white eggs and a
atreaky bn!ed called the Amer1canu
lay blue or green eggs. They taste the
same as other eggs. Raia said. but have
a yolk that Is a bt1~terydlow.
The eggs are usually warm
when they're first laid Raia sometimes
picks them up from inside the fence
that separates the hens from the
visitors and lets children reach
through the railing's boles to feel the
warmth.
Cross-bred hens are said to lay
better, so the mix offered at the fair
ranges from brownish Rhode Island
Red CroMeS to white-feathered
Leghorn Crosses to even a breed called
the Americana Q'Osses, which sport
the tiger-like streaks.
Darlene Castanon, witnessed the
Intrigues of each chicken for the first
time QD Friday.
Her sister told her about how her
chicken was laying blue eggs.
Ml had never seen one until now,,.
she said, pointing to a light blue egg on
the rail.
The 80 some chlclcens lined up in
pens were actually laying eggs as part
of a contest. Future Farmers of
America children, as well as members
of 4H, were competing for the most
eggs laid.
A chart detailing each group's
progreta showed, on Friday, that the
Yorba Unda Ooverlea& 4H 12 were
winning. with 32 eas laid from the
beginning of the fair to 11 p.m. oo
Thursday.

The Costa Mesa college has a
four-show season pf vintage plays
scheduled, but wlU bring back a
popular entry from past seasons to

It's "The Road Most Thaveled," a
musical romp through the
defining moments of growing up.
This time around. it's being
directed by senior student Rachel
Hart and will take Lts audiences
through "the horrors, the wonders
and the hum.i.l.iating moments that
every human experiences in the
pursuit of conquering ~dhood"
The coming-of-age musicaJ will
be offered for one weekend only,
Sept 5 through 8 at 8 p.m., with a
matinee Sept 7 at 2 p.m. in the
college's 4'Cewn Theater. The
Vanguard season offidaDy begins
in October with one of the most

Agatha Christie's 'The Mousetrap,'
which bas been entertaining

football in 1994, Jackson has
come a long way, lo say the least
He is the all-time leading receiver
for the Los Angeles Avengers, and
he also leads the team in touch·
downs. This year, he's been a big
reason the Avengers have
clinched a playoff spot
To think. these accolades re-
sulted from what started out as a
joke.
"l mostly did it as a joke. just to
go out there and pass time," Jack-
son said, explalning the reason to
play football while at OCC. Ml
ended up enjoying it and I was
halfway decent at it"
Jackson seemed liJce a natural
in regard to the wide receiver po-
sition. His taJented background
in basketball eased him into be-
coming a prolific pass catcher.
Jacks<?n played prep hoops and
was a star at Mater Dei High. He
also competed in track and field.
"What I've been able to bring
over from basketball is the hand-
to-eye coordination. boxing out
the defender and going up for
the ball. that all came very natu·
ral for me," Jackson said.

37 receptions for 743 yards {20.08
yards per catch), catching passes
from quarterback Man Saulc.

from Ryan Leaf, the No. 2 pidc of •

Jackson, as a senior in 1997, set
the Cougars' single-season re-
cord for touchdown receptions
with 11 and was ranked as the
No. 4 receiver in the Pac-IO, with
54 receptions for 1,005 yards
(18.61 yards per catch). He
caught five passes for 89 yards in
Washington State's 1998 Rose
Bowl loss to Michigan.

Jackson. He couldn't find a place
on an NFL team. He went to
training camps, but never found

After the 2000 season. the Ten-
nessee Titans signed Jackson, but
he suffered from a back injury.
Now Lhat he's enjoyed a success-
ful 2002 season with the Aveng-
ers, he said he's opened to the
opportunity of playing in the
NFL, but it wouJd have to be the
right situation.
Jackson. 27, lives in Los Alami-
tos with his wife, MicheUe, and
two children, Almani. 7. and
