1. Grease interceptor (G.I) required for establishments where food is
being prepared. All drains within food preparation area must connect
to G.I. before disposing into main building / public sewer.
2. Type II hood required for heat or steam generating appliances.
3. Type II exhaust discharge must be 10 ft. away from building
openings, property lines, grade level and adjacent buildings. In
addition, exhaust shall not discharge onto public way.
