Re : Lima Roll Project Description and Justification
To Whom it May Concern,
This letter is a written statement describing the proposed project in
detail. We will be serving permanent and seasonal Peruvian inspired
Japanese hand roll and sushi specializing in seafood. In addition to this,
we have a dedicated Omakase (Chef’s tasting) program we plan to
launch. At this time, there are no restaurants in Newport Beach/Corona
Del Mar offering what we are, considering we are flying in fish and
seafood directly from Japan and live seafood one day out of the water.
Lima Roll is highly focused on bringing local communities together and
we have sourced our fresh organic greens and all of our different
ingredients from Orange County suppliers . Currently, there is nothing in
the area offering Nikkei Japanese food, which utilizes Peruvian
ingredients — tropical fish, quinoa, aji amarillo peppers — molded by
Japanese techniques. Multiple chefs cite the modern preparation for
ceviche as particularly indicative of the Nikkei style. We have already
been meeting with more local farmers, adding an additional level of
synergy with our restaurant and local businesses.
Our aim is to provide great dishes, with seafood being our main focus.
With seafood, there has always been a natural pairing with sparkling
wines, cocktails, sake, and certain beers. Lima Roll will be offering an
eclectic collection of wines ranging from local wineries to European
wineries, sake from Japan, and Asian craft beer for our guests to match
up with our seafood, sushi, and dishes. We will also be providing
education sessions, where we will teach our guests about all the
complexities in seafood and how to properly care for, clean, and enjoy
them raw or cooked. We are looking to build a relaxed and comfortable
environment for people to come enjoy delicious food and drinks.
Surrounding the development is mostly retail space, with a neighborhood
behind us. As there is nothing around our area offering Peruvian and
Japanese seafood as fresh or with the variety that we will have, we would
love to have the opportunity to service everyone in this area and from
other areas, whether it be for a quick lunch, a casual after work
destination, or for a dining evening out.
For the last fifteen years, I have lived, breathed, eaten, and drank what
Orange County has to offer. With California Shabu Shabu, The Iron Press,
Shuck Oyster Bar, The Blind Rabbit, Rolling Boil, Barcode, Stowaway
under our belt along with many clients that we have consulted for, I
know the community, and the community craves and will embrace the

concept we are bringing in. I have been speaking with my potential
customers daily about this new project and there already is a big
groundswell of people very interested in us opening up! All we need is
the final piece of the puzzle to add our wines, sake, and other specialty
drinks.
Below is the information related to the existing and proposed use of the
project site:

5. Number of Seats - 7
6. Hours of Operation: 7AM to 11PM
7. Use - Food service, no late hours. We are looking to obtain an
ABC Type 41 license serving beer, wine, sake, and shochu. We
will not be open past 11PM.

Lima Roll wants nothing more than to bring the freshest seafood
possible, delicious drinks, and create a synergy within our local
