Staff Contacts (list of server staff) as of January 15, 2008; 2. Daily Consolidated System Sales Detail for the month of December 2007; 3. Employee parking tag (sample); 4. Kitchen Employee Payroll (non - server staff) records; 5. Food Purveyor Purchase and Cost from June 2007 through first week of January 2008; 6. Food review in the October 2007 issue of Riviera Magazine; 7. Advertising for the restaurant in 944 Magazine that promotes the food. Notes/Comments: 1. The staff list contains three names of employees that took the LEAD class previously at a different location than the December 20 class at the restaurant. 2. The Daily Sales will show the sales for each particular day. 3. The Employee parking tag will be provided to all employees. All evening employees have been instructed to try to park on the second level of the parking garage as the parking garage is open to the public after 5:30 pm. 4. The Kitchen Employee Payroll is provided to substantiate staffing of the kitchen. 5. The Food Purveyor Purchase and Cost consists of the invoices from the various food purveyors to substantiate the purchase of significant amounts of food inventory. 6. The food review highlights the fine dining aspect of the restaurant. 7. The ad in 944 illustrates the operator's efforts to promote the high quality dining Letter to Aaron Harp, Esq. I request that the City keeps items 1, 2, 4 and 5 confidential and not part of the public record due to the confidential and proprietary nature of the information provided. This information is provided solely in response to the City's request for substantiation of certain issues. It is further requested that these items be returned at the conclusion of this matter. I have provided copies of the staff report to my client and have asked my client to provide responses to the issues and concerns raised in the report. In order to fully analyze and provide a thorough response to staff, I request that the Planning Commission hearing scheduled for January 17 be continued to February 21.
