Try These Selected Recipes
GRAPE JELLY
5 cups juice
e"Ai cups cane sugar
l box powdered fruit pectin
To prepare the Julee. Stem
about 3~ p q u n d s fully ripe
grapes a n d crush Uloroughly.
(Concord grnpes give best color
and !Javor.) Add 1 % cups water;
bring to a boll and simmer, cov·
ered, 10 minutes. Place Jn jelly
cJolh or bag and squeeze out
juice. Measure 5 cups Julee into
a large saucepan.
To make the Jelly. Measure
cnne sugar and set aside. Pla~
Faucepan holding juice over high
heaL Add powdered fruit pectin
and sUr until mixture comet to
a hard boll. At once stir In sugar.
Bring to a full rolJlng boll and
boll hard l minute, ,stirring con-
st..1nUy. Remove from heat, skim,
pour quickly Into glasses. Paraf-
fin at once. Makes about 11 slx-
ounce glasses.

5 cups brown wgar
2 cups v1negnr
2 cinnamon sticks
2 tablespoons whole c1ovH
<i quarts pears or peaches
Cook sugar, v 1 neg a r, and
~plcea 20 mJnut.es. Drop In fruit,
a few at a tJme, and coot until
tender. Pack into hot, sterlll..zed
jar1t, ad<llng syrup to within 14
inch of top. Seal. Makes 6 plnta.
GRAPE AND PEAR JAM .
4 cups prepared fruJt
7 cups cane sugar
I boUJe fruJt pectin
To prepare the fruJt. Slip skins
from about 2 pounds fuJJy rlpe
Concord or other loose·skinned
grapes. Bring puJp to a boll and
simmer, covered, f5 minutes.
Then sieve to remove seeds.
Chop or grind skin• and add to
pulp. . Peel • and core about 1
pound fuJJy r'pe pears. Grind or
chop very flne. Combine fruits
and measure 4 cups into a very
large saucepan.
To make the Jam. Add cane
sugar to fruit in saucepan and
mix well. Place over high heat,
bring to a full rolUng boll..t..and
boU hard 1 mf nute, stfrrlng con-
atantly. Remove from heat and
at once stir in bottled fruit pee·
Un. Then stir and pim by turns
for 5 minutes l~ cool slightly,
to prevent floating frulL Ladle
quickly lnto glasses. Paramn at
once. Makea about 11 alx-0unce
