L ast Saturday night, I grilled a filet mignon on ow out- side barbecue. This was an occasion on several counts. First of all, I eat most of my red m eat when my wife is at work or otherwise engaged because she has come to believe from voluminous r eading that red meat isn 't good for us. And, second, she aJso discovered in her reading a treatise on home barbecues that made them seem downright lethal. So it was a considerable con- cession for her to share a home- barbecued steak with me. There was one condition, however. !-!er research had also informed her that only by cooking beef \vell- done can we kill the bacleria on the n1eat. For about seven decades I have been eating beef medium-rare, so I have probably asslm.i.Ja ted a lot of bacteria. Maybe by now I have even built up an immunity to 1t. But I fig- ured since she hnd come this far. I could make that concession As a result, we ate charred filets that she kept insisting stoutly weren•t bad at all and that I have been brooding about ever since. I suppose that's why the carbon monox..ide detectors she laid on me two days later pushed me over the edye. My wife, who should knO\Y better, believes vl.rluaUy every· thing she reads.
