The couple's first child, Ava
Be rlacher, all of seven pounds, ·

long, was also Hoag Hospital and
Newport Beach's first baby of 2001.

18-day toll!, from June 21 through
July 8. The trip will cost students
$3,795. That fee Includes round-
trip transportation, centrally locat-
ed hotels, daily continental break-
fasts. seven dinners, local guides,
historical sites, museum fees and

Worth two ·college credits, the
summer trip includes stops in •
France, Switzerl4nd , Italy and
Germany. It will concentrate on
the arts, architecture, culture and
history of many of the countries'
more notable cities.

Orange Coast College is offer-
ing a series of six workshops
designed to help the managers of
small businesses.
The wor~ho~ will be run by
the Service Corps of Retired.Exec-

tration as resource partners. The
'group is dedicated to aiding In the
growth and success of small busi-
nesses. ...
The first course, business plan
development, will be held J an. 9
followed on Jan. 23 by a session
on marketing and promotion and
financing your business. On Jan.
30, a detailed class on-computer-
ized bookkeeping and financial
statements will be offered. In Feb-
ruary, the workshop will teach tac-
tic to make e-commerce !iUCcess-h.il for small businesses, followed
by the art of selling techniques in
March. .

all six classes or $20 each. in
advance, $25 at the door. The
workshops will be held at Nation-

'Culinary champions to
compete in Hawaii

champion culinary team leaves for
Hawaii this month to compete in
the American Culinary Federation

Hot Food Championships.
The competition is scheduled
for Jan. 20-22 at the Hilton
Waikoloa Village on the Bid Island
of Hawaii.
Each team will take part in an
intense two-part, 2-1/2 hour com-
petition. During the first hour, stu-
dents will be required to perform
10 specific vegetable cuts to
exacting requirements, then take
over the Hilton's kitchen for 90
n1inutes to prepare a four-course
meal.
OCC's five member team has
selected a "California Asian··
theme fo'-the competition. The
first course will feature consomme
flavored with lemon grass and
garnished with herb-flavored
royale, followed by a salad with
micro greensand, a tureen of
Japanese eggplant and tofu. The
main course will be seared duck·'
breast with citrus demi-glaze.
Dessert will feature chocolate
mousse flavored with mandarin
orange and raspberry. The team
that takes the gold in Hawaii will
advance tQ the American Culinary
Federabon national finals in Las
Vegas.

The orientation will cover all
aspects of volunteering at the
arboretum lncluding jobs for both

Orwellian Big Brother pic-
ture it paints, should make
parents and administrators

Santa Ana Heights. Costa Mesa and Newport
Beach near the John Wayne Airport really
know what the full unpacts and unpbcabons of
the county's· proposed 16-foot-lugh concrete
retauting waJJ al the southern border of the
rllrport property will have on the commuruty.
Neither Cost.a Mesa nor Newport Beach
wds even made aware of this project dunng •
the course of the planrung, which has gone on
for over 18 months The dosest residents to
the auport have been left in the dark by the ~ty also. .,,
The county dauns to be concerned with
correcting erosion and beautifying the dirt
slope. I believe there is a much ~ter ~otlve.
The county is proposing to eliminate roughly
hall the existmg slope to then install a vertical
concrete waJJ. Such a proposal. m my opinion.
does not beatify. it destroys the commuruty.
For one-quarter of the cost to bwld the con-
crete wall. the slope can be irrigated and land-
scaped with burlap nettmg and high-density
groWld cover. This would not only solve the
e rosion problem but would also beautify the
slope. An example of this very proposal on a
steep.er slope can be found less than a quarter
of a mile north on Bnstol Street Landscaping
would also absorb noise from the freeway and
airport, whereas concrete will reflect more
noise into the swroundmg Santa Ana Heights
community.
Proposing such a massiv~ retaining wall
can only mean clea.ring the way for the first
phase of extendmg the runway over the San
Joaquin Hills Thmsportation Corridor. Remov-
mg much of the slope as is being proposed
would allow for future columns to be con-
structed alongside the retaining wall to ~
port a cap over the freeway to support the
future runway extension. Such a proposal is
not new and was onginally proposed by the
county in 1969, only their intent was to recess
the San Diego Freeway~ allow for a 10,000-
foot runway over the freeway. The proposal
lailed. as should this retaining wall.
