A FAMILY TRAf>mON Donovan Andrews, a tattoo artist at Autumn Moon Tattoo ll in Costa Mesa, said he became interested in the art form as a child. The first tattoos Andrews saw were those worn proudly by his grandfather a'nd father. "It's something I've .always ·been interested in,· said Andrews, 48. "Tattoos are exciting. They just give you that adrenaline feeling.• Andrews began his career as a graphic artist, then started turning some of his artwork into tattoos. His first tattoo was a girl's name, he said. Twenty-three years ago. when Andrews was a regular customer at Santa Ana Tattoo, the parlor offered him an apprenticeship. Andrews began working at the Costa Mesa tattoo parlor in 1997. INSTANT GRATIRCATION Although Andrews said everything about his work makes him happy, the most satisfying part is the end result. "You get to see your art walking around out there where everyone can see it." be said. •Seeing t;bat people are excited and proud of the tattoo, showing it to other people, is very sat- isfying .• Andrews said getting to know the customers is also a big highlight of bis job. He counsels the customers -espe- cially those getting large tattoos -on placement and suggests different phases of tattooing if the designs are too big to complete in one sitting. "The canvas is alive, and there's a spiritual connection when you're tat- tooing somebody,• Andrews said. And I'm find- ing'that his public approach to religion has become a good deal more fascinating than his political positions. He ts reaching out in every conoeivable direction with his unabashed embrace of reli- gious faith -and he is touch- ing chords in some rather unexpected places. .J This i.nitated me, at first, because I regard one's person- al faith as a private matter. But his enthusiasm was infectious and finally turned my i.nitation to puzzlement Why was this \Vorking? And how did it dif - fer from the effort or the Christian fundamentalists to use the political system to propagate their views? I asked this question of sev- eral local Christian pastors who generally approved or Lieberman's expression or faith and don't see a double standard in bis acceptance. Said Dennis Short, pastor of Newport Beach's Harbor Christian Church: ·1 would be hard-pressed to agree Wlth Sen. Lieberman that religion is the only route to morality, but I'm personally pleased to see a person so comfortable with his own faith able to live a strong and useful political life, too.• Added John Huffman Jr., senior minister at St. Andrew's Presbyterian Church: ·1 admire anyone who genuinely -expresses faith in a noncoer- dve way.• They, along with Peter Haynes, rector at St Michael's All Angels Episcopal Chwcb, saw several logical reasons for the positive reaction to Lieberman's constant refer- ence& to religious faith .• Among them: people are used to hearing Cb.ristian funda. mentalists. but this Jewish voi(:e is new and fresh; he doesn't take them to places they don't want to go ("Christianity is a proselytiz- ing religion," said Rev. Huffman. •And Judaism isn't.·). As a layman trying to sort out political candidates, I can attest to the second point. Religious proselytizing in a political speech doesn't sit well with a lot of Americans who have put down individual spiritual roots, but want them watered rather then pulled up for a new plant. Lieberman thus far is watering the old plants effec- tively, but this is a slippery slope. If he gets carried away -for example, by implying, as he did the other day, that morality without religion is impossible -be may take a fall and carry Al Gore with him. • Most or us have no interest tn promoting our own reli- gious views. We just want to be able to express opinions on secular matters without being told that someone on the other side is speaking for God. When that happens, we will be i.nitated -whether it comes from Joe Lieberman or Pat Robertson. Lieberman told an African American chW'Ch CQngrega- tion in Detroit last week.: •Let us reach out to those who may neither believe nor observe, and reassuie them that we ~ share with them the core val-7 ues of America, that our faith is not inconsistent with their fr~om. and that our mission IS not one of mtole rnnce, but of love.H That's why people are buy- ing Joe Lieberman's religious talk. CUny spices combine with cinna- mon, cardamom and other foreign ingredients to immediately trans- port me to some far off, mystical place. The succulent lamb morsels are as tender as I've ever had, and the marinade high- lights the meat's natural flavors without creating a distraction. creamed spmach that is cooked with cubes of mild cheese similar to mozzarella. Or try the Mush- room Mateer, which combines del- icate peas wtth savory mushrooms in a lightly spiced white sauce. Indian food is served with a variety of condiments and side dishes, all designed to complunent the spicy aavorings of the entrees. Raita ($3) is a yogurt dish that 1s flavored wtth chopped cucumber and mint or other herbs. It's a cool- ing counterpoint to the heat of many of tile other dishe.,: I can't explain why. I love Indi- an cuisine, and I always drove or walked by and thought that the intimate-looking restaurant, sand- wiched betweeg a Kentucky Fried Chicken and a liquor store, looked interesting. I just never went in. DON L!ACH I OAlY PILOT Head chef Dharem Punair, standing at left with manager Amin Ali, has been with Mayur ln Corona del Mar since the restaurant opened. By far the best lamb dish is Karahi Lamb ($14.95). Here the lamb is coated in a yogurt mixture spiced with cumin, garlic, ginger, coria0£)er and cinnamon, and cooked in a special pot that resem- bles a cast iron wok. The flavor combination is beyond description , and seems to stimulate all of the various tastes at once. . No Indian dmner can be com- plete without Sdil1phng several lndtan breads, mdny of which are cooked in the tandoor Punsts can order Naan ($2 50), a shghtly leav- ened flat bredd that 1s dctually slapped on the side of the clay oven to cook. When 1t falls from the side, it's donP Paratha as suntldr to Nadn, but is stuffed with he rbs or other ingredie nts. I hke the Mint Pdrathd ($3.95) and the Pdlek Parathd, which is stuffed with i.pinach. Well, I'm glad to say that I've now eaten at Mayur several times and will most certainly go back. It's some of the best Indian food I've tasted in Orange County, cooked with a subtlety that never overpowers but instead teases one's taste buds. The restaurant itseU has recent- ly undergone some renovation. The exterior of the building thdt houses the fast-food place and the liquor store, as well as the restau- rant, recently was given a new facade, and the owners of Mayur took the opportunity to redo the interior. Muted purple and orange tones on the walls and ceilings create a warm, elegant atmosphere. The kitchen, located in the rear of the restaurant, has a glass window facing the dining area, which reveals the tandoor, a clay oven used to prepare many of the restaurant's specialties. Oftentimes, I've had kldidn cui~ sine that is overpowering and too greasy. But not here. Chef Dharem Punaj.r, who's been with the restaurant since it opened, has a sure but subtle hand with his ingredients, and allows his food to tease the palate, but never overpower. This is not to say that the tem- perature quotient can't be quite high. It's just that the hotness nev- er takes over the dish, but rather enhdnces dnd .compliments the other flavors. . The appetizers provide the per- fect wake-up call for your taste buds, such as the Samosa ($5.95), crisp triangle shaped pastry stuffed with a spicy mixture of potatoes dnd peas. The Samosas go well with either of the spicy sauces -one flavored with tamarind, the other a sort of spicy cilantro pesto -that are placed on the table as you're seated. qruon Bhaji ($4 .95) are India's answer to onion rings. Shredded onion is dipped in batter and fried, resulting in a crispy but light frit- ter. Shrimp Chat ($9.95) is more reminiscent of a Spanish ceviche than something I'd expect at an Indian restaurant. Plump shrimp are marinated in a combination of lime julce, sugar, hot peppers and other spices, creating a tart, clean, citrus flavor that is the perfect compliment to some of the warmer, mellow spices used in many of the other dishes,. The entree selections at Mayur feature lamb and chicken, as well as many vegetarian dishes. Some of my favorite dishes are cooked in the tandoor, which can easily reach aoo· degrees Fahrenheit. The high temperature results in food that is seared on the outside, seal- ing in the juices for a moist, flavor- ful result. A good ~xample is the Tandoon I ordered ~ recently with a friend who doesn't like lamb and watched in amazement as she helped her"5elf to secondi.. It's difficult to descnbe the fla - vorings used in Indian cooking. Unlike some cuisines, where a Sm· gle spice will predominate a dtsh, Indian chefs combine a varie ty of spices to create subtle, intnguing tastes that, as a whole, bear little resemblance to their parts. A good example is Chicken Ttkka Masala ($14.95). This dish combines chicken tikka -bone· less chicken pieces cooked in the taQdoor -with a tomato based sauc:e flavored with onions and a heady blend of spices. She takes forever to die while her sniveling, whining son, who is locked in prison, bellyaches. overacts and final- ly escapes. He's cheesed off, and soon he too is dead. This bummer of a buddy movie follows a couple of members of the MacClod, actually MacLeod, clan, as they travel through time try- ing to kill the bad immortals who are trying to kill the good • immortals. So, you have immortals in a fight for survival. Why would immortals -who are by definition unable to die - need to fight to survive? Wouldn't they be immortal? I guess until they die, they're immortal, whi& means they're just like the rest of us -immortal until we die. The albatross of deteriorat- ing campuses that hung on the bae,k of Newport-Mesa schools for years has been tossed into the dust bin of history. Bathrooms that were so in need of repairs that children refused to step foot in them, cracks in the ceilings and floors and tales of rodent inf es- tation will soon be problems of the past. That it happened was noth- ing short of a miracle -made possible, of course, by the hard work of volunteers and the kind votes of local citizens -but district officials were able to convince a normally tax-wary public to pass a $110-million bond measure last June. So now, with the infrastruc- tural problems addressed, it's time to move to other chal- ~99es -namely boosting stu- dents' scores at Costa·Mesa campuses. Last year, we had mixed emotions when state educa- tion officials released th~ir API rankings. Those rankings, based on standardized testing, proved one district can have vastly different results. Newport Beach elementary schools were in the top per- centile with Andersen Ele- mentary in Corona del Mar the shining example. Its test scores came in at a district- high 933, first in the county and 14th in the state. But while that is plenty of reason to rejoice and com- mend Andersen students and parents, there was also cause for concern. Not one Costa Mesa school reached the state's target score of 800 points, with Whittier Elementary hovering at the bottom. That campus, largely popu- lated with non-English-speak- ing students, scored 443 on the rankings, a near 500-point difference from Andersen. The difficulty the district faces is dear. Tue differences in culture and in language are steep barriers to overcome. And Whittier and other Costa Mesa schools did fare better when I Newport-Mesa schoolchildren began classes this week. compared to ·similar campuses. But more needs to be done. The new standardized test- ing launched by the district· this year is one major step, and the effort should be applauded. But ther~must be more creative options out there to boost academics. If the same energy and pas- siem that went into passing the school bond could be applied to raising the educational stan- dards in some of our lesser performing schools, even greater miracles than the BRIAN POBUOA I DAl.V Pl.OT bond's passage could be per- formed. However, the Daily Pilot's editorial (•Measme T should dwnp developer money,• Aug. 24) continues in the tra- dition of Measure S proponents. ask- ing those who support and make Newport the wonderful city it is to sit idly by and not mount any opposition. not to speak out. and not to conbibute money to get the facts out despite the continuing attacks. It is the opponents of Measure S, and supporters of Measure T. that •get it,• to coin the phrase repeated ad infinitum by the Pilot. They under- stand what is at stake if Measure S should pass. They understand that it will do more damage than any ~torm God could devise to the Newport Beach community. But the Pilot chose rather to repeat false perceptions and attempt to make its case about not fighting back. After three years of continuous and false attacks, and despite the protec- tions of the First Amendment to the Constitution of free speech and the right of association, the Pilot finds inherent evil if people decide to figb\_ back with their donations.
